Love, love your headband!! Beautiful! Although, on your video I believe there's a mistake on the instructions of row 7. You said after the first four stithces of knit, purl, knit purl...... you said knit four but if you look at your written instructions it saids 3K (C3B). I tried it with instructions of video but it does not work. Am I mistaken?

I guess everything is correct. if you loop at the written instruction Row 7: selvage st, 1k, 1p, 1k, 3k, [C3B] - 2 times, 3k, 1k, 1p, 1k, selvage st.
I am saying 1k, 3k but in video i am saying k4. I separated 1 knit stitch to show that this stitch is connected to headband's border. Maybe i should not do this if it is confusing

You are knitting and purling 2 strands at a time. Could you please give more instruction? I have never seen that before. Do we use two skeins at a time? Or if one skein we double the stitches and knit 2 at a time?

Yes. Just knit as usually but holding 2 strands together. Otherwise you can use heavier yarn and 1 strand. You can use 2 balls or 1 ball and take second strand from the inside of the ball

You do not need to use 2 strands. Use one. If you want the same width you will need to cast on more stitches then
