Im a large man 6'3'' 250 pounds . will this device hold up to me and my size , not all climbers are 5'6'' 140 pounds

The CRITR will easily handle you. I've got fellow canyoneering friends pushing 300 lbs range that use it and love it.

Would you suggest using a safety with this setup? Like a VT Prusik?

No reason not to. People with single point of safety are going to be more likely to have an accident.
