  • Step-by-step recipe for a delicious cake in the shape of a roll.
    If you love the taste of eclairs, then this recipe is for you!
    For the dough we need:
    100 ml milk,
    100 ml water,
    a pinch of salt,
    80 grams of butter,
    130 grams of flour,
    3 hen's eggs.
    Prepare the choux pastry:
    In a thick-bottomed saucepan, alternately add the milk, water and salt. Place over a medium heat and add the butter,
    Heat so that the butter melts but does not boil.
    Now add 130 g of wheat flour, stirring constantly until a homogeneous mixture is obtained (see video).
    Pour the mixture into a suitable cup, leave to cool slightly and add 3 hen's eggs (as in the video), stir.
    Then pour the finished mixture onto a baking tray lined with parchment paper, spread evenly over the tin and make small irregularities (see video).
    Bake in an oven heated to 200 degrees for 30 minutes. When ready, remove, cover with a towel (to keep it soft) and leave to cool.
    Preparation of the pudding:
    We need:
    2 hen's eggs,
    150 grams xylitol*,
    10 g vanillin,
    30 g cornflour,
    400 ml milk,
    50 g butter.
    Pour the eggs, xylitol, vanillin, starch and 200 ml milk alternately into a saucepan with a thick base - stir well and add the remaining milk.
    Now put the pan on a medium heat, cook while stirring constantly, as soon as the mixture thickens and characteristic bubbles appear, turn off the heat and add the butter, stir until the mixture is completely homogeneous. The cream is ready, leave it to cool a little.
    Assemble the roll:
    Spread the cream on the smooth side of the cake and roll it up into a roll.
    If you like, you can decorate the roll with berries. We have sprinkled with xylitol powder.

    *Xylitol sweetener is a naturally occurring sweetener used in diabetic and dental products. Xylitol is found in berries and fruits, hardwoods and corn cobs.
