Only thing is that our noodles are usually cut reaaaaally short, and with that they are so short and thin that we don't need to cook them for long! The convenience ✨✨ Like you literally cook your soup and in the end just put vermicelli in the pot, turn the heat off, put the lid on, wait for 5 minutes and ta-dah!

Vatapá really goes with something else, it it's called "Acarajé". Acarajé it's kinda of a bean dumpling, it is fried and it's stuffed with Vatapá, shrimps and Caruru, it is very spicy. The recipe we actually use here for Vatapá it's slightly different and the final result looks more like a cream. The orange/yellow color comes from a oil called "azeite de dendê" that gives the right coloration!

So the noodle bowl you tried is basically vietnamese and the reason we put so much sugar in it is to balance with the saltiness of the fish sauce, you can substitute it with some soy sauce even though of course it won't taste the same or I would recommend diluting down some Hoi Sin sauce with a bit of water and a dash of sesame oil as a sauce for the noodle without any other ingredients or maybe some chili if you feel like it
