Never had butternut Souffle. When I was a child, I could not eat Butternut Squash. Other Squash varieties were fine, but there was something about Butternut. After I was gone overseas for a few years and came back, my taste changed and I now love it baked, fried, made into pies like pumpkin (after baked), boiled, and in casseroles.

My mama used to bake them in the oven with butter and brown sugar. I loved them cooked like that.

Thank you for explaining about the substitutions. I didn't know so many different squashes and sweet potatoes could be used. It looks really approachable.
