This time I made Matcha sable sandwiches with Dulcey chocolate.
Dulcey chocolate is caramelized white chocolate from Valrhona. It has a wonderful salted caramel flavor.

Components
*Matcha Sable Dough
-Unsalted Butter (soft) 60g
-Confectioner's Sugar 47g
-Organic Matcha Powder 6.5g
-All-purpose Flour 114g
-Almond Flour 17g
-Eggs 1/2 ea
-Fleur De Sel pinch
*Dulcey 32% Ganache
-Heavy cream 75g
-Glucose syrup or corn syrup 4g
-Invert sugar (Trimoline) or honey 10g
-Dulcey 32% Caramelized White Couverture (Valrhona) 149g
-Butter (soft) 10g

Hi! LOVE your videos, please upload more! Just out of curiosity, Why do you add almond flour for the sable cookies? I’ve seen a few others that added too but there isn’t any explanation. Can I do without almond flour? Thanks!
Hello, dear.
Almond flour gives a unique flavor when it's combined with butter and a texture. Since there is no gluten in almond flour, it replaces the amount needed for dry ingredients in the recipe. You can substitute other types of nuts pistachio or hazelnut. You can make without nut flours; however, it will end up like a regular butter cookie.

for the dulcey, dyou think i could sub with dulche de leche + cocoa butter? I wanna make sure i get the ratio right!
Hi. It could be separated since there is no emulsifier and too much water quantity in the condensed milk. Also it’s hard to tell how much quantity of ingredients should be replaced to get similar taste.
I cannot tell it works because I haven’t tried with dulche de leche with cocoa butter, but you can play with that.
Here are my suggestion:
1. The best ways are using Dulcey from Valrhona or Gold from Calleabaut or Zephyr Caramel from Cacao Barry.
2. Make your own caramelized white chocolate in the oven at 130C while you keep stirring every 10 minutes until milk fat in the white chocolate caramelized. It takes around 45-60 minutes.

녹거나 그러진 않기에 실온 보관 하셔도 상관없어요. 조금 더 실온 보관에 적합하게 만들길 원하시는 경우 가나슈의 크림 양을 줄여주시면 됩니다🙂
