    This time I made another version of Le Fraisier cake.
    As you can see, my previous video of le fraisier, classic fraisier cake made with mousseline cream, which combines pastry cream and whipped butter or buttercream.
    However, I don't prefer mousseline cream personally because it has too much butter flavor, so it's heavy for me.
    This recipe will show you how to make another version of fraisier cake.
    This cake composed of pastry cream that texture is between bavarois and pastry cream, moist almond cake, and strawberry coulis.

    Components
    *Strawberry Coulis
    -Gelatin Powder (200 Bloom) 1.2g
    -Water for Gelatin 6g
    -Strawberry Puree (Ponthier) 120g
    -Water 15g
    -Glucose Syrup 9.3g
    -Pectin NH 3g
    -Sugar 20g
    -Citric Acid 1.5g
    *Moist Almond Cake
    -Almond Paste 170g
    -Butter 170g
    -Sugar 170g
    -Eggs 165g (3 ea)
    -All-Purpose Flour 130g
    -Baking Powder 5g
    -Fleur de sel (salt) pinch
    -Sourcream 170g
    -Vanilla Bean Paste 3g
    *Pastry Cream
    -Gelatin Powder (200 Bloom) 11.7g
    -Water for Gelatin 59g
    -Milk 390g
    -Heavy Cream 46g
    -Vanilla Bean 2 ea
    -Egg Yolks 78g
    -Sugar 117g
    -Custard Powder (Elsay) 24g
    -Pastry Flour (T45) 24g
    -Cocoa Butter (Cacao Barry) 26g
    -Mascarpone Cheese 47g
    -Butter 52g
    -Heavy Cream for Whipped Cream 195g
    *Macerated Strawberry
    -Fresh Strawberries about 20 ea
    -Sugar 2 tsp
    -Grand Marnier 10g
    *Nappage Spray
    -Absolu Cristal (Valrhona) 100g

      Hi, there😄 you can use cornstarch instead. However, you need to increase 3% of vanilla in the recipe to get more flavor.

      You can use kiwi fruits for cover, but cannot use for insert with this recipe.

      여기서 코코아버터의 역할은 고정제로 젤라틴 만으로 만들 수 없는 꾸덕한 식감이 나오도록 해줍니다!
