- UK Christmas Dinner Glazed Ham Recipe with honey, mustard & cloves using a strung gammon joint. Ingredients list and method below. This glazed ham is a family favourite in my house for Christmas Dinner and on sandwiches for the Boxing day buffet. I've been making this recipe for many years and frequently do a cook-along on Twitter, but after many requests I've made a video so you can follow along.
Ingredients
1 gammon joint ( any size ) but over 1kg works best
2 carrots
1 parsnip
1 Onion
1 stick of celery
Pepper
Salt
Cloves
Bay leaf
Mixed herbs
For the honey and mustard glaze
Cloves ( optional but look great )
Runny Honey approx. 4 tablespoons
Mustard ( English or French) approx. 4 tablespoons
Method
🎄 Place your strung gammon joint in a large pot and cover it with cold water.
🎄 Bring the water to the boil and then remove from the heat.
🎄 While the Gammon is cooling, peel and then chop your vegetables.
🎄 Drain the water from the pan, leaving the gammon in there.
🎄 Add fresh cold water, the vegetables and herbs & spices to the water and place on the hob and bring to the boil.
🎄 Once the water is boiling, turn down to a low simmer and start your timer.
The rule is 20 minutes per 500g plus 20 minutes........
500g = 40 minute's simmering
1kg = 60 minutes simmering
1.5kg = 80 minutes simmering
2kg = 100 minutes simmering
2.5kg = 120 minutes simmering
3kg = 140 minutes simmering
🎄 After the required cooking time remove the pan from the heat and let it cool before draining.
🎄 While the Gammon is cooling, you need to mix the honey and mustard glaze.
Mix equal parts honey and mustard in a bowl, 4 tablespoons of each is a good place to start.
If you think it's too little, mix some more. ( you can never have too much because it makes an excellent sauce )
🎄 Remove the Gammon from the water and place in or on a non stick oven safe tray.
🎄 Now is a great time to preheat the oven to around 200°c
🎄 Gently remove the string from the joint and assess the level of fat.
🎄 If there is a thick rind, then this must be removed and a layer of soft white fat must remain.
🎄 Now we can cut the fat in a criss-cross and stud with Cloves ( optional )
The size of the diamond cuts doesn't really matter but try and keep them all uniform if you can.
🎄 Now it's time to smother on the honey and mustard glaze.
Start at the highest point and use the back of the spoon to push it down in to the cuts you have made.
🎄 Once the fat is covered with the glaze, pop the gammon in to a preheated oven ( approximately 200°c) for around 10 minutes.
🎄 After 10 minutes, spoon over some more honey and mustard and turn the gammon around so that all sides brown evenly.
🎄 Return to the oven for another few minutes and repeat the glazing as many times as necessary.
🎄 Place the Gammon joint on a serving tray to rest for a few minutes and then slice as required.

16:38. Remove the ham from the oven and re-glaze with the honey and mustard dressing
17:41. Return the ham to the oven for 5 minutes to finish cooking the glaze
