  • INGREDIENTS
    4 oz Dried chilies
    2 tsp Shrimp Paste
    2 TBSP Coriander Seeds
    2 tbsp Shallot (CHOPPED)
    2 tsp Salt
    1 /4 CUP GARLIC (CHOPPED)
    2 TBSP CILANTRO ROOT
    2 TSP Kaffir lime zest
    2 stalks LEMONGRASS (CHOPPED)
    2 TSP GALANGAL ( CHOPPED)
    10 WHITE PEPPERCORNS

    Thank you for showing how to do this with a pestle and mortar as it is all I have. Making this for my son and now it is favorite meal and asks for it. Also learning that it can be frozen is great. The video is one of the best I have viewed.

    Wow that is a beautiful, rich color it ends up being. I always thought a curries main ingredient was turmeric, but I'm learning more about Asian foods lately and I can't wait to make something this fabulous!

      Curry main ingredient is turmeric. But this is red curry so there's no turmeric

    I live in Bali and and struggling to find the large dried red chillies. Can I use fresh instead? We've got bucket loads of those. I tried making it with the dried birds eye chilli but it was knock your block off too hot.Thanks for the time you take responding to my question and making these super cool videos

    The galangal sort of looks like ginger. Do they have a similar flavor and if so, can you use ginger in place of the galangal?

      Unfortunately totally different. Omitting galangal or using ginger cannot be authentic. Store-bought curry paste is a better option if authenticity is what you want. Even Thai people is Thailand often use store-bought ones.

    Love this recipe, and also the explanations. If you could get enough kaffir lime juice would you use that instead of the zest or is there a reason to use zest? I imagine the zest is more aromatic. A foodie relative of mine living in Thailand says he's never seen zest used.

    Chilly paste is good, can we add powdered shrimp and cook for sometime so that we can keep it in the fridge for use later. In the freezer we can keep it longer. Thanks

    So to make this not spicy at all just just a few large dried peppers ? I’ve been looking for a good paste to work with and mild it down , I love spicy but my family does not so making this with a few peppers would work well?

      Make a chicken curry

      Mix with 1 can coconut milk and 1 tbs sugar. Add thin sliced chicken (against the grain), frozen or frsh veggies. Heat until chicken is cooked and veggies are tender. Add aome frozen peas at the end. Serve over white rice and enjoy your red curry!

      They also called it belacan in Asia. In my country, it comes in a oblong package and have the words belacan and shrimp paste writen on it.

      Chitown! I would try the grocery stores on Argyle Street and then Chinatown. I know it's not Thai town but we don't have one in Chicago. Let me know if you find them. I'm going to make it with regular limes. With so many flavors in this paste I don't see how this tiny alteration with change the flavor profile that much.

    Are you sure that's 2 tablespoons of coriander seeds? Looks like you had 2 TSP there. I made it with 2 TBS and it's very coriander driven.

      +Jimmy Page I would say no. But that's a personal choice. There are some flavours fresh chillies can't procure and vice versa.

      add miso paste (soybean paste) it's available in any asian food store, keep an eye on the label, some is made with fish

      +bettz quito Yes. But the flavor is less strong if you use the ginger

      They're very different in terms of taste. Galangal is more earthy, and I'd consider it pretty important.
      Then again, use whatever you have available, just know that it's not the same. :P
