I grew up on chowder made with canned milk and when I started making my own I switched to heavy cream because I thought that was more sophisticated somehow. But my tastes weren't more sophisticated so I went back to canned milk and I'm all the better for it 😉
My mother always made macaroni and cheese with evaporated milk and it was delicious. She also used it in making hot cocoa. She was not a great cook but both her macaroni & cheese and the hot cocoa were wonderful.
Brings great memories growing up in the 70's and early 80's. Didn't have much but chowders like this kept home as home. And easy to stretch if unexpected company came by. Thanks for sharing🤠👍👍👍
Lovely. I "owned the kitchen" a few weeks ago when the family was lamenting the empty state of the pantry. I slapped together what we had and made "stuff in a pan" that knocked their socks off. Thanks for the inspiration!
This was a summer meal growing up, used a bit of salt pork instead of bacon and fresh picked corn and potatoes. I add whatever other veggies I have and make it a veggie chowder, carrots, green beans, celery and peas are all things I've thrown in.
Mmm, Summer Savory is such a good ingredient for soups and stews, really uncommon these days, too. I try to keep some on hand to use on some old family recipes, but it's ridiculously hard to find in stores down here in the States where I live. I usually have to special order it online to get more.
For those in the USA, Trader Joe's has a frozen, fire roasted corn that is excellent. They also have a tasty, jarred corn salsa that would add a nice spice
Question! Have you ever triied making beurre manier (how ever it is spelled), by using potato Starch? I am curious, since potato already exists in the chowder AND it thicken super nicely! I have switched to this, from the classic corn starch! It works great in pies etc.

Satureja hortensis. It kind of tastes like a mashup of thyme and oregano. There's also winter savory (Satureja montana), which tends to be stronger in flavor, but still the same sort of "Southern European herbs" flavor. Both are easy to grow.
Chowder for me was, onions, potatoes and water just to cover, simmer till tender, add fish or clams. When done add a can of evaporated milk and just bring back up to temperature, don't boil. Still prefer it that way.
Glen can you expand a bit on what makes a Chowder a Chowder and what makes a soup a soup? Chowder is not something really common over here (if we have it at all, I'm not sure) so it would be interesting to know.
Any starch such as rice flour, corn starch, etc; can be used as a thickener in lieu of standard flour, keep in mind it will change the texture and you’ll want to add it at the end after the cream so that you don’t overcook it and break the mixture.

In a soup I have made, I toasted the frozen corn on a sheet pan in the broiler before adding it to the soup.
I'm not usually a fan of corn based soups but my mouth is watering.

Celery, carrots, extra potatoes or corn, mushrooms would be good. Does your allergy apply to canned peppers? Canned diced green chilies would be good.

Yes. I think of chowders as cream of whatever soup. It's a cream soup. That said, you'll get a lot of argument about that from many New Englanders.
Instead of flour to thicken I like to used canned cream corn.
my daughter cant eat dairy, so I make it for her with coconut milk and instant mashed potato's to thicken it.
