You'd use the verb "되다" which means "to become," because when we say "I want to be ~~~" we really mean "I want to become ~~~." It's used with the subject marker (이/가). "(저는) 매니저가 되고 싶어요." "저는" is optional since people will probably know you mean "I" when you say it.
If you're addressing a large audience, you have to consider who your audience is. If it's an audience including people you might not be close with (Facebook friends) then you should speak politely if you are talking to them. If you are just posting a status to yourself, like you're speaking to yourself, then you can post with the Plain Form or using casual speech.

By the way, if I have to add anything to your clip, 'ㄹ/을 래' must be used with one of the first person pronouns or second person pronouns. It would have been literally perfect if you had mentioned this phrase is not for third person.
Could you please also write out the translation in hangul of the skit you do. I am still a beginner and sometimes you talk fast so I really cant hear a few words and just have to guess from you Eng translation.. Thank you :)

That works too. To download the PDFs normally, go to the article for the video by searching on the web site, or browsing manually through "Learn Korean - Full Lessons with PDFs" on the side of the site. Then click the article for the video, and there will be a download link there.

No, it's only used at the end of a sentence.
