I've been fascinated by the concept of flex take off / assumed temperature derate for more than 2 decades, including back in the days when I studied aeronautics at City University, London. Without doubt, this is the clearest detailed explanation I've seen out there in over 20 years!

So basically just enter the outside temperature into the flex to temp?

No. Its more of enter the temperate in which the aircraft can still takeoff with the runway given (its all calculated).
Plus one of the conditions for flex is that the flex temperature has to be higher than actual outside temperature

Just to add something: according to A350 FCOM, reduced thrust limit should not be higher than 40%, compared to 25% on A320s.
