  • Mapo Tofu is a classic Sichuan dish made of tofu and ground meat that's simmered in a spicy and unctuous sauce. It's a super flavorful dish that will leave your mouth tingling from Sichuan peppercorns.

    you're using firm tofu, you don't need to the the salted water step. You only do that if you use silken or soft tofu.

      @@emmaroyanez228 why skip the salt bath for tofu? Cause in the video it's already firm , it doesn't need the salt water bath. Only needed for silken or soft. IMO silken is more for smoothies or dessert use. Soft is ok for mapo use

      The spicy bean paste and Sichuan peppercorns are a bit speciality and may need tracking down, but the rest of the ingredients should be readily available and fairly cheap. Hope it comes out well for you! 👨‍🍳

    I'd fry the scecuan peppercorns in the oil, then remove them. That way you get the numb, but not bite into them. Also, you could simply grind them into a powder, then add. Biting into a peppercorn is not pleasant.

    Why sake and not xiaoxing wine? I know it doesn't matter but just curious on the profile change it has

      Its bc this is a japanese style
      Also you mispronouced shaoxing wine, but most bottles of shaoxing wine say shaohsing wine or hsiaoshing wine.

    What does the blanching do?

      Blanche the tofu is supposed increase firmness. But since he is starting with firm tofu he doesn't need to blanch it. You only really need to blanch silken and soft tofu when using in mapo dish.

      Usually silken or soft tofu yes. I use firm myself when I make mapo..I like more texture over smooth and fall apart.

    What could be the substitute for sake??

      It's a Chinese dish from Sichuan, so there's no sake in the original anyways
      You should also open up your dried chilies and Sichuan peppercorns in oil first, then remove and dice before reading

    Suggestion here: don't just drop whole sichuan peppercorns in there, someone's gonna have aREAL nasty bite. XD Instead, toast some, then pop into a spice grinder for powder, AND prepare spme sochuan peppercorn oil by lit. just frying some whole sicuan peppercorns in canola/veg oil. Also, bruh, don't use sake, wtf, use a chinese rice wine or even better, use shaoxing and sub some simple chicken stock or broth instead of a Korean soup, I agree there are interesting similarities between east Asian cooking schools, but at a certain point it feels like an 'eh, w/e, Chinese/Korean/Japanese same thing' approach xD
    OH, another fun way to do mapo tofu woth somethingother than white rice is stir fried ramen. Just boil some ramen in salted water, drain, pour cold water over to stop cooking, drop in a towel and spin that suckah around to remove ALL water. Next, toss the noods into the sauce, and serve that way. One might say "but wouldn't that scramble the tofu?' YEP. so instead, after blanching, just fry it in a seperate pan IN hot chili oil until the outside slightly crisps up! Problem deliciously solved.

    what if I can't find chili and bean paste? Is there any other alternative?

      The black bean paste can be omitted. The red chili paste (doubanjian) is really essential to the mapo flavor. I would try to seek it out at your local Asian market if you can. I have other recipes (in a playlist) on my channel that use it as well, if you do find a jar of it and are looking for other things to make with it. Good luck! 🙂

      you can make korean style mapo tofu! i think that one doesn’t need doubanjiang and instead uses gochujang and gochugaru iirc

      The tofu? Yes, parboiling it first helps keep the texture when added back into the sauce later! Hope it works out better for you next!! 😊

      You can eat it "raw" but it's basically an ingredient on itself and it's always best to include it on larger preparations, most often (but not always) cooked
