Perfectly Smooth Lentil Soup Recipe | Easy & Delicious

- Ingredients:
• 2 tablespoons olive oil
• 1 tablespoon butter
• 1 medium onion (finely chopped)
• 1 tablespoon flour
• 1-2 green peppers (optional, chopped)
• 1 tablespoon tomato paste
• 1 teaspoon pepper paste
• Half of a medium potato (optional, finely chopped)
• 1 cup red lentils
• 7 cups boiling water
• Meat or chicken broth (optional)
• Salt (adjust to taste)
• Dried mint (optional)
Preparation Steps:
1. Sautéing the Onions:
• In a pot, add 2 tablespoons of olive oil and 1 tablespoon of butter. Once the oil is slightly heated, add the finely chopped onion and sauté until it becomes slightly golden.
2. Cooking the Flour:
• After the onions are sautéed, add 1 tablespoon of flour and cook until the flour’s raw smell disappears.
3. Adding Vegetables:
• Once the flour is cooked, add the chopped green peppers and sauté for a few more minutes. Then, add 1 tablespoon of tomato paste and 1 teaspoon of pepper paste, mixing well.
• If desired, add half of a finely chopped potato and optionally some carrots. Sauté for another couple of minutes.
4. Adding Lentils and Water:
• Add 1 cup of red lentils to the pot and sauté for another 1-2 minutes.
• Pour in 7 cups of boiling water. If you have homemade bone broth, meat, or chicken broth, you can add it now for extra flavor. If not, you can skip this step.
5. Cooking the Soup:
• Add salt according to your taste. (I used 1 teaspoon of salt, but you can adjust it based on your preference.)
• Once the soup comes to a boil, blend it until smooth. If you like, you can add dried mint before blending or afterwards, depending on your preference. My daughter doesn’t eat it when she sees the mint, so I add it before blending.
6. Serving:
• Once the soup has a smooth consistency, turn off the heat.
• Let the soup cool slightly before serving.
