I usually use fresh raw shrimp minced for my egg foo young, for the gravy I make a broth from the shrimp shells, I make it with the ingredients that you use to make your gravy, thank you for sharing...

Here is a tip I would suggest less eggs but also so the eggs don’t dry out add some cornstarch so the eggs don’t dry out. Also if you kept the higher temperature and while cooking poke wholes in the eggs cooks faster and the higher temp makes the patties less greasy!
I tried your recipe today, didn't have any peas and carrots, so I improvised by using some green pepper, baby red, yellow and orange peppers, also didn't have any red onion, but used some yellow and green onions. Everything turned out delicious. Put over white rice (flavored with a touch of sesame oil and a touch of soy sauce). Very delicious and thank you for sharing it with us. I used leftover boiled boneless skinless chicken thighs instead of shrimp.
Love egg foo young, but it is not seen in modern "upscale" Chinese restaurants. It is a really common dish in China, and eaten all times of the day. So versatile with what you can add, but fairly plain is good for me. The sauce is important.
I like you version of this dish and I've seen a lot . I find your way to my liking because of the veges you mixed in . The others just use bean sprouts and nothing else, a number of patties floating in a sea of oil. This is healthy which pleasantly surprised me. ADD ON : I learned about Steve after reading the comments. I was liking him in the few minutes watching. It's weird to feel a sense of loss. I'm sorry for your loss Sheila.
Can I tell you something Shotgun Red....? Usually you can make this in 10 to 12 minutes but Mr Shotgun Red, took his time to be very explanatory & detailed, well done sir. Not bad, actually, its a terrific recipe to really give a change of pace to usual weekly American meals. Great job Shotgun & Shiela
I live in Los Angeles and none of the Chinese restaurants make it like this anymore. They put the vegetables in the chicken on the top of the patties And it is not near as good but I think they do it so they can cook it up fast and easy and I don’t wanna be bothered. Since I can’t buy it here I’ll cook this myself Kathy

Having a really hard time finding the thick rich brown gravy in Utah. Egg Foo jung gravy here is like soup with all the other ingredients not cooked into the omelette. Sad.,
I LOVE EGG FU YOUNG.. MY Mother would make it And serve it on a Bed of Rice. Splash with a touch of Soy sauce. I'm gonna Cook me up a batch with this Recipe.

Add a tablespoon or two of flour to give it some structure, fry in a cast iron pan so you can use a ladle to pour 2 or 3 to fry at the same time.
