There are so many ways to make ruffles on your cakes, which is your favorite?
Can these be made in advance
@@TheLadye2u Yup! I prefer to still have them a little soft when I put them on the cake so I can make them fit together. If you wait until they are super dry and hard, it may be more difficult.
To prevent that, you can make them in advance, let them dry for a little bit (like 30 min to an hour) and then store them on a flat surface like a cookie sheet in a plastic ziplock bag.
Can I frost de cake with fondant first and at the same time attach the petal ruffles on it?? Or it has be strictly buttercream frosting plus ruffles.. deliver a cake to some one of a distance abt 2 and half hours journey and wanted to frost all in fondant. I'm in Ghana west Africa .

Hi Sara! I think that was a 7" tier and I most likely used an entire batch of my Marshmallow Fondant.

Hi I love love your work came upon one of your videos and been watching you ever since, I’m inspired to make a cake similar. I’m wondering what size cakes are you using and roughly how long did it take to do the ruffles? Thank you
Thank you Jess! This cake is 5" / 7" tiers on a 12" cake board. (I usually do 7" bottom tier on a 10" cake board, but the ruffles take up a lot of space so I went with the 12")
To cover the 7" tier, I believe it was about 3 hours to make all the petals and put them on there. It does take a while, but it is really pretty!
Hi Karolyn I’m so nervous tonight. I’m making my petals tomorrow night. Can I put them in an airtight container? I’m using an 8 inch cake. You’ve inspired me to take the leap to do this. The cake will be picked up Friday Evening. If I put the cake in the refrigerator after I’m done will it be fine. I’m covering in buttercream as you did. You’re the BEST. THANK YOU 😊
You can put them in an airtight container if you want! You have to make sure that they are firm so they hold their shape and don't get distorted when you put them into the cake. Also, if you refrigerate the cake iced in buttercream before you put the petals on, make sure the cake sits out for a little bit so the buttercream can soften a little and you can easily get the petals to go through the icing. And I refrigerate all of my cakes, so once I finished this, it went back in the fridge. You just have to make sure that if it is hot / humid outside, you keep the cake cool. (A/C on blast!)

Thank you so much. As I try to roll out edges it’s tearing and when I put them together it’s tearing also. OMGGGGG. I’m wondering are they too thin? I’m using satin ice fondant. This has to be ready Friday. I’m stressing right now and I have vertigo. Dear God
Thank you soooo much for this tutorial!!!! My client is traveling 3 hours with the cake! What do you think of me putting toothpicks in each one?
3 hours?! That's a long drive with a cake! I'm not sure if toothpicks are necessary because you're pushing the petals into the cake. That will help to anchor them and hold them in place. Maybe keep the tail of the petals long enough to really push them in?

I’m not sure how to do these ruffles in Buttercream. But in the past, I’ve used a petal tip to do Buttercream ruffles. I do have a tutorial on that!
This is really beautiful. Was the bottom of the cake covered in fondant before you attach the ruffles or was it buttercream ?

Thank you! I keep my iced cakes in the refrigerator, not the freezer. I only freeze my cake layers after I bake them. Once I thaw them and fill and ice the cakes, they go in the refrigerator.

I'm sorry but there is a typo and I'm a little confused as to what you're asking? You said how do we call this cake, can you elaborate on what you mean? The cake is iced in buttercream and covered with fondant.
Thanks for this tutorial so details. I been trying to find video that show fondant ruffles on buttercream covered cake . How far ahead can I make the ruffles ? And do I just leave them out room temp with plastic wrap ?
You're welcome Sharon! I usually make them a day or two in advance. And, yes, leave them out at room temp with plastic wrap. You don't want them to be too soft because the shape will distort as you push them into the cake. But if they get too hard, they could break. So there has to be a happy medium!

You can, however, I don't make them more than a day or 2 in advance just because they are delicate and can break as you push them onto the cake if they are too dry. So if you want to make them soon, You may want to wrap plastic wrap over them and just be super careful when you are putting them on the cake. I hope that helps!

Beautiful as always!!! How do you calculate the number of ruffles you may need?
I take a tape measure and measure the circumference of the cake, and then measure how tall it is. When I put the petals on the cookie sheet or cake box lid, I make sure I have enough to fill that area. I hope that makes sense!

Hi, can i use ruffles techniques on whipped cream?
I'm not sure if the whipped cream would be stable enough to support the weight of the ruffles. I haven't made whipped cream before, so I can't say 100%. But I'd look further into it before you try!

Do you think a 2 pound or 5 pound of fondant is best?
I make my own marshmallow fondant in 2-3 pound batches. I prefer to make marshmallow fondant rather then buy it from the store. Store bought fondant costs more and is notoriously soft. So even with the addition of Tylose powder, it can have a hard time setting up.
Could I put the ruffles on the cake the night before pick up and have it in the fridge or would you recommend doing them the day of pickup?
I could have sworn I replied to this! For this cake, I put the ruffles on the day before and put it in the fridge until pickup. This way it has time to set and will be sturdy when it travels.👍
Is the bottom tier buttercream
Yes it is! I find it easier to push the ruffles onto buttercream because I can counter-sink them into the icing. I'm sure you can do the same with fondant, I just prefer to do it on a buttercream cake.
What does marshmallow fondant taste like?
It's made of melted marshmallows and powdered sugar, so it really tastes like marshmallows to me! The texture is a bit chewy.
My ball tool is plastic does that make a difference
Metal ones are better, they glide smoother. These are my fave!

I usually make these a few hours to a day in advance. I don't let them get too hard because they can break when I put them on the cake. So I like to have it hold its shape, but not be too dry and brittle when I handle them. The 7" tier was approx. 5" tall. ☺

I marbled the fondant similar to how I did it in this video. I just didn't mix it as much so I got a lot of striping.

Can a plastic ball tool be used ?
Yes you can, I just find that the metal ones glide over the fondant better. 😊
I would like to do that but the cake has to travel for two hours. Should I freeze or just refrigerate the cake?
I never freeze decorated cakes before travel. Just because the temperature differential will be really drastic. Are you in a hot or humid climate?
