Easy Weeknight Chicken Pesto Pasta | Instant Pot recipe

  • Chicken Pesto Pasta is an easy weeknight meal that cooks up quick in your Instant Pot! Join Jenn & Barbara from Pressure Cooking Today as we cook this family-favorite recipe!

    Ingredients
    2 tablespoons unsalted butter
    3 cloves garlic, minced
    2 large (about 1 lb) boneless skinless chicken breasts, cut into bite-size pieces (no thicker than 1-inch cubes)
    2 cups reduced-sodium chicken broth
    2 cups water
    1 16 ounce package cavatappi or rotini*
    1 teaspoon salt, plus more to taste
    1 teaspoon pepper, plus more to taste
    Pinch of sugar
    2 tablespoons cornstarch
    2 tablespoons cold water
    1/2 cup jarred pesto
    1/2 cup heavy cream
    2 cups diced tomatoes (we used Roma, 4 or 5 tomatoes)
    1 small can mushrooms, drained
    2 tablespoons finely chopped fresh basil
    Freshly grated parmesan cheese and/or mozzarella cheese, for serving

    This would go down well in my house, we all eat everything. We love trying new foods, when my daughter was 2 I have a photo of her fast asleep in her high chair covered in home made spaghetti bolognese, so funny, she was still holding her spoon, she is Jens age now, nice memory. Love your channel, you are both such a hive of information and I love the banter. Thanks girls.

    OK I just tried that Pesto pasta we really liked it. I think I’m gonna step it up next time and try some diced olives in it.

    OK I’m the guy just learning these recipes so bear with me I didn’t catch how much cream and what’s the ratio on the slurry the cornstarch and the water

    I love your series and have only recently started to watch them. I've been using pressure cookers for a long time. From the old manual ones [shudders] to the electronic ones. Currently I have a 6L electric pressure multi-cooker (sautee, steam, rice, slow cook, pressure cook). I now don't need a 6Ltr cooker. And I want to be able to bake/roast etc, just like the instant cook pots. My question is ... Instapot's web site is so confusing. Can you tell me about the smaller versions please? What they're called and if they're about 3 Litres? American imperial measures are very strange to me. I have no idea what a quart is (sorry).

      Thanks for watching! 3 quarts is 2.839 liters so about the same. Most recipes are created for 6-quart pressure cookers, so you may want to halve recipes for a 3 quart (liter).
