I think displaying more Mocs vs sets is a great idea! Especially since you have started to use more custom vehicles which makes Legos models obsolete. Keep up the great work!
I love this and recently I started doing this myself! I buy the sets for the figs and I build them to learn new techniques, but then I almost immediately take them apart for the pieces. I also understand the draw of collecting sets, but I think it's a bit cooler to be able to display your own builds

I also do not collect and display many sets. I only have a few sets still built (Rivendell, Lion Knights Castle, and the new Galaxy Explorer). Any other set I've recently bought and built has since been parted out and sorted for MOC building.
I do think Legos bigger sets like the ucs style stuff make for great display pieces! I have the ucs imperial shuttle and sandcrawler and wish I could display them.
I think that we have a similar philosophy for when it comes to what we display, out of all the builds i have on display, 5 of them are official sets, everything else is either custom sets or the few MOCs i've built to date. Main reason being that Lego official sets don't really capture what i want for my collection, accuracy and complexity are my main focus. I still buy a lot of official set but mostly for the minifigs and to be up to date with the new parts that Lego offers as it's a great development tool/asset for the custom sets i create or collaborate with other designers.
I have a couple ucs sets I would like to display but I want to start displaying more custom vehicles. When I eventually get a larger permanent display setup I want to invest more in those types of builds.

For me buying Lego sets is very much a finite thing. It's not that I don't want to keep collecting, it's just I don't have nearly enough space or money for that matter. With Lego becoming more & more expensive, I rarely buy a set straight away as most are just vastly overpriced imo but that's just the way things go I guess.

They are just carefully stacked on top of one another.

You should split a base plate into 4 even squares and do you 4 favourite Star Wars battles or anything else you want to do.

After buying most of the old sets I wanted for nostalgia I realized there just wasn't much of an appeal in the newer sets.

I do the exact same thing! Would rather spend my $$ on parts for a MOC/MOD then on a LEGO set these days.
For sure, especially because actual Lego bricks are pretty cheap.
