Wondering whatever happened to the droids after the clone wars, and all the possible ways they could have been used afterwards, is one of my biggest questions of the Star wars universe.
There are a couple of stories in both legends and Canon that explain what happened to the majority of the droids and some little fun side stories of droid life after the war. B1s like Mr Bones and R0gr, or uh I forget his name there was a commando droid that served with the alliance right up until the new Republic. I hope Dave Filoni, or someone like Timothy Zahn will tell the story of the separatist Droid survivors from Star Wars: Rebels.
In Rebels it was revealed that Kalani, a Super Tactical Droid, actually ignored the shutdown command. He thought it was a Republic trick. He and his forces had a run in with Kanan, Ezra, Rex and Zeb, first fighting them, and then teaming up with them to escape Imperial forces. What happened to him after that, I'm not sure... Also, fun fact, Kulani was the Separatist commander during the civil war of Onderon. The same war Saw Guerra and his sister fought in.
A deep underground thermal eltric powered spertist hydroponics farm tended by droids where people live in comfort. The extrenl part of the world an army of trash recycling droids convert metallic trash, and striping and recycling star ship parts. Thuse producing huge profit 📈 for the few there.
I imagine they were scrapped, mostly. But I can see their blasters perhaps being distributed to the early Imperial Army. The droid blaster, the E-5, is a predecessor to the E-11, the Stormtrooper blaster, after all.

I remember in the Original Battlefront 2 Campaign that you had to fight droids as stormtroopers towards the end. Those were my favorite levels when I first played through that game.

Heh, the CIS wanted justice. The fault was of the high ranks of the military, not the citizens or workers. Most of them didn't even knew how the military worked.
Imaginig one of these worlds produced an army of the Dark Troopers for the Jmperial remnants is wuite a scary thought. If one of these remnants have so.e of these mechworlds under their control, of course.
Good our friends from the trade federation have done their support and when their battle droids combine with ours we will have army greater in the galaxy as ever seen the republic will be overwhelmed
If I were them, I would reprogram and remodel the Char B1 Baguette to be butlers, servants, psychiatrists, farmers, waiters, chatty bots, etc, and sold them to the whole universe making more profit than the Disney could milk.
Probably would of been stopped by the companies themselves, cant allow old production to become competition to new sales. The USA did the same after WW2 destroying tens of thousands of trucks, automobiles and other equipment rather than allow the surplus to slump the post-war economy.

Imagine the empire or rebels stealing an ISD killing all the crew and waiting for a rebel or imperial ship to come along, when the rescue team/ faction ship gets there they board the ship only to be greeted by thousands of battle droids. The rebels or empire could use this trick as there were plenty of deactivated droids around which the empire didnt scrap yet and this trick could work on both factions. Also scanning for life signs would be a dead search
So basically these former droid factories were converted to produce Imperial gear instead? I suppose that’s one way to deal with these factories but if they were just gonna use them anyways, why not use the specialities they already had and produce Imperial variants of CIS droids?
Because the Imperium was the former republic and so its inhabitants had bad associations with droids. Also using human soldiers instead of droids made the military branch of the imperium more present in the daily lives of people and ensured more loyalty than a droid army would have.
