Just came across your video.....Tip, I was taught by my Grandmother born in 1901, she always said of using a root vegetable, i.e. potato, carrot, onion, sweet potato, you get the idea, if boiling, cover with a lid and done in 15 min. It's Spot on. Thanks for the recipes
I made Zuppa Tuscana soup a couple weeks ago, and didn’t have any fresh kale, so I used my dehydrated kale and let it rehydrate in the soup, no one knew the difference, it was delicious
I’m making the Pasta E Fagioli now. Waiting to put the pasta in, but from tasting for seasoning, this is a hit with me! Will also be adding a 6 ounce bag of baby spinach at the end.

I'm so happy to hear that! It's also very versatile. We also use that bread to make french bread pizzas, french toast slices, garlic toast, our Thanksgiving stuffing, and french toast casserole. ❤️

Thank you so much for sharing your recipes … on the first soup to make it easier you could make a cut up oversized cubes of potatoes they would cook faster also but maybe they would turn into mush due to getting over cooked? Maybe put them in later so they won’t overcook..I will have to just try it and see! I will making all three of these soups ! I really enjoy and appreciate your channel. Blessings 💕
i made a mexican version of pasta fagoli last night with fresh corn tortillas. so delicious! instead if using ground beef, this time i used ground lamb. so good!
I might be the odd ball out here. But I love the zuppa Toscana at the olive garden as is. What I like is that it is more on the brothy side. Don't get me wrong, when I make my potato soup I do as you do, smashing the potatoes to make it creamy. I usually use russet and Yukon gold or red skinned potatoes together for the potato soup as the russet tend to break apart. When I make the zuppa Toscana however I like the Yukon or red skinned potatoes. Cut into slices. I will add the cream and kale (finely chopped) just at the end. With the heat turned off. But that's just my preference, and I also like to make adjustment to different dishes to our liking. I also love their chicken and gnocchi soup.
I just did your Italian bread, it was great. I also, understand about the cost of dog food. I make my own, my dogs live to be at least 17. I don’t have a lot of vet bills. Good nutrition will prevent vet bills. If you want my recipe, that can be canned. Let me know. I have 3 big dogs, all rescues.
I have been doing homemade dog food for over a year for my little Shih Tzu. It is a 10 quart slow cooker and it gives me about three weeks worth of food so I freeze it in 3 cup portions. I would love to have your recipe if you don’t mind sharing it, thank you

I add some leeks to my zuppa, makes it even better. And I grate up Asiago cheese & add about 1cup, or to your own taste. Asiago is close to parmesan taste but more economical to use.
This is a delicious soup. May I make a suggestion cut the potato’s in small enough pieces to fit on the soup spoon before you cook them in the broth. I would not want to try and break up the potato’s while dealing with a hot liquid boiling on the stove you have a good chance of getting burned.
PRO TIP: I make Zupa soup all the time too but I add 1 pound spices link sausage and 1 pound ground sausage and I use either cauliflower or cauliflower rice instead of the potatoes and then it’s low carb/keto friendly.
Okay, I am definitely going to have to give that a try! I try to stick to my calorie deficit and low-carb. With a large family, it's a little challenging, but I know they will eat cauliflower rice occasionally. Thank you! 😊

LOVE Copy Cat Zuppa tuscana as well as our whole family been making it for years, we use italian sausage links that we slice and brown i always have a hard time finding ground italian sausage
All of those soups looked so easy and delicious! I have made the zuppa Toscana many times before and I really like to mix up the types of sausage (sweet and hot or mild and sweet) changes it up just a tiny bit 😊 also, if you have it, adding a cup or 2 of sweet corn is really nice too! I have tons in my freezer so I'm always trying to use it up 🤣 Thank you for the great ideas and keep the videos coming! I love 'em!
I have a ton of corn in my freezer as well as freeze-dried in the pantry. I'm going to have to give that a try and add that in. My husband and I LOVE the zuppa with hot sausage, but my younger kids don't appreciate that level of heat quite yet 😂
These all look amazing. Now to figure out what it will take to can these up to be ready on the shelf! The dairy and pasta are the only ingredients off the top of my head that can’t be canned. OR maybe I could do more of a meal in a bag with all the ingredients ready to go either in a freeze dried form or canned. The wheels are turning…thank you, this is a perfect time of year for these soups!

These are all awesome looking. I have made the Zuppa Toscano and my family loved it. I also make a heartier version. I had tasted mine before I tried Olive Garden's, and was also so disappointed. I can't wait to make your version of the other two.

Thank you so much!! It's my favorite room in the house where I spend most of my time. The cayenne adds the tiniest bit of heat, but more so a little more flavor. My toddlers eat seconds of this soup, but if you're not a fan of any heat, I would just cut it in half to 3/4 tsp or omit it altogether 😊
I am a new subscriber. Great video for hearty soups. If you have a Parmesan rind, it would be good to add it to the Pasta e Fagioli soup. Will try some of these in the coming weeks.

Has anyone used spinach instead of kale? I’m not a kale fan. I tried it once raw and the texture was too much for me and the taste was bitter. Is kale better cooked? I have tried spinach in the soup before, but we honestly think the kale tastes better for this recipe. Hope that helps!

Mine are 44 years old and I’m still using them . I bought mine at a store called Service Merchandise it was a huge set for $110.00 back in the year of 1980 and it had everything kind /size of pots and skillets with lids that I would need to use to cook anything that I would like to cook up . I’ve enjoyed cooking in this cookware for 44 years and they still look great and have been cooked in daily all these years. Back then I was a newlywed and when I saw that set in that store I knew that I needed that set of Faber ware Stainless Steel Cookware so I began to save up our money which took me awhile in order to buy them but it was worth it and It was a fantastic purchase .
You can add more potatoes to it to thicken it. I added a lot more potatoes one time, and it was very thick. I suppose you could add cornstarch or arrowroot to it as a thickener as well, but I have never done that.
(In transcribing your directions for the pasta e fagioli, it seemed to me that the soup would have cooled a lot after adding the beans and pasta, so I included instructions to increase the heat to bring the soup to a boil before adding them, then returning it to a boil before starting the cooking time for the pasta. Sounds like you essentially did the same thing.)
I have the same problem you do, my measuring spoons and cups are always in the dishwasher when I need them. I can't tell you how many times I have to take them out and wash them to use them.

I do this exactly like you minus the bacon. I will give it a try next time.
By the way, for the potatoes I set a 20 min timer. It always works!
You can also use a potato masher to break the potatoes apart.
I use a potato masher to mash the potatoes down some, much or little as you like.

Mine are 44 years old and I’m still using them . I bought mine at a store called Service Merchandise it was a huge set for $110.00 back in the year of 1980 and it had everything kind /size of pots and skillets with lids that I would need to use to cook anything that I would like to cook up . I’ve enjoyed cooking in this cookware for 44 years and they still look great and have been cooked in daily all these years. Back then I was a newlywed and when I saw that set in that store I knew that I needed that set of Faber ware Stainless Steel Cookware so I began to save up our money which took me awhile in order to buy them but it was worth it and It was a fantastic purchase .

I love soups but how would you make the Zappa Tuscano a little thicker
You can add more potatoes to it to thicken it. I added a lot more potatoes one time, and it was very thick. I suppose you could add cornstarch or arrowroot to it as a thickener as well, but I have never done that.

(In transcribing your directions for the pasta e fagioli, it seemed to me that the soup would have cooled a lot after adding the beans and pasta, so I included instructions to increase the heat to bring the soup to a boil before adding them, then returning it to a boil before starting the cooking time for the pasta. Sounds like you essentially did the same thing.)

I have the same problem you do, my measuring spoons and cups are always in the dishwasher when I need them. I can't tell you how many times I have to take them out and wash them to use them.

For the potato soup, could you use vegetable stock instead of chicken? It would fit into my faith tradition that way.

Totally agree! I just have a LOT of bouillon cubes to use up! 😅
I’m sure it’s good but I think 3 lbs of potatoes might work also. I also make potato soup
