Super Tasty Chicken Cheese Dinner Rolls

  • How to make your own Chicken And Cheese Dinner Rolls at home.
    Here's what you'll need:
    Chicken Filling:
    2 tbsp oil
    1 tbsp minced garlic
    2 tbsp chopped red onions
    300 grams chicken breast (cubed)
    DOUGH:
    1 cup warm milk (250ml)
    1 large egg
    3 tbsp sugar (40g) you can adjust according to preferred sweetness)
    3 and 1/4 cup all purpose flour (406g) Or bread flour
    2 and 1/4 tsp instant dry yeast (7g)
    1 tsp salt (5g)
    3 tbsp softened unsalted butter (45g)
    1 cup grated cheese (mozzarella) or you can use any cheese you prefer
    Eggwash: 1 egg + 2 tbsp milk
    Sesame seeds for topping
    Directions:
    1.For the CHICKEN FILLING: In a large pan, saute oil, garlic, onions and chicken until brown.
    2. Add the salt, pepper powder, garlic powder, onion powder, smoked paprika, cayenne, oyster sauce and water.
    3. Cover and cook for about 7 minutes. Stir until liquid dissapears.
    4. Set aside and let it cool down while preparing the dough.
    5. DOUGH: In a bowl of a stand mixer, add and mix together warm milk, egg and sugar.
    6. Add flour, yeast and salt.
    7. Using a dough hook attachment, set at speed 2 for 5 minutes.
    8. Add and mix in softened butter. Mix until dough is smooth and elastic. Around 5 minutes.
    9. Form the dough into a ball and place in an oiled bowl and drizzle with oil.
    10. Cover and let it rest for 60-90 minutes or until dough is doubled in size.
    11. Deflate the dough by punching out the gas.
    12. Roll out the dough into rectangular shape.
    13. Place the filling and grated cheese.
    14. Roll tightly into a log. Pinch the edges to seal.
    15. Cut into 9 equal pieces. You can eyeball or you can use a ruler.
    16. Place in a greased baking dish.
    17. Cover for 20-30 minutes. Preheat oven at 180°C(350°F) at this moment.
    18. Brush dough rolls with eggwash. Beaten egg with 2 tablespoons of milk. Top with sesame seeds.
    19. Bake for 22-25 minutes. Depending on your oven specs. Convection-22 minutes Conventional Oven-25 minutes.
    20. Brush with melted butter 5 minutes after you took it out of the oven.
    21. Serve and enjoy!

    Made this on Tuesday. Even though I'm using an APF that has a higher protein level (11.7) I still had to add just under 2 tbsp of extra flour but omgee. My dough came out beautifully. I didn't have to take it from the stand mixer to the counter to knead further which has only happened a few times for me. Instead of using your suggested seasoning I used a little bit of a taco seasoning packet with the chicken. I also used shallots along with the garlic. That was SO tasty. Because my dough came out perfect I had no issues rolling my dough out. Nor did I experience any difficulties rolling when I added the meat and cheese. These were so good. 2 bonuses here. 1. You can put whatever type of meat, seasonings, etc to really customize them. 2. Once they've cooled a bit these are something you can just pick up with your clean hands and go to town on. You'd probably have to make more than one batch but these would make for a great "finger" type of food for a gathering. I didn't experience any fall out of the stuffed ingredients. And the bread? Oh, so soft and fluffy. If you've been holding off on making these I'd say go for it. Can't wait to make again using different ingredients. 👍🏻👍🏻 Savory. Thanks... 🙏

    Just put it in the oven. This time I used some diced shallots, 3 different colors of bell peppers, a little bit of tomato sauce then seasoned the entire thing, including the chicken with some onion salt, garlic powder, black pepper, Italian seasoning and some reg salt. I'm sure they're going to be tasty because my mixture sure was. Ran out of most of my mozzarella cheese so I subbed Colby cheese in with it. I can't wait to have a roll 😋 BTW, my dough came together beautifully. I used bread flour this time. If you haven't made it yet you have to. Promise you'll love it. Great thing is? You can change up the ingredients to fit the flavors you're going for...

I made the rolls with bread flour, they came out so good! So many things you can do with this recipe. These make for a great quick lunch for the week.

      @@karenj5880 Oh, that's too bad but I'm glad you enjoyed them. 1st time I made them I used APF so I had to add a little bit more flour but when I made them with bread flour I didn't have to. With this recipe we both now know bread flour is the way to go 👍🏻. Oh, absolutely. I plan to make a batch for my sister. She's always so busy doing for others that she doesn't take the time to fix herself a decent lunch. I'm not sure if you're aware of this but if you ever find yourself wanting to make bread but you don't have milk in the fridge you can use evaporated milk. Instead of using a full cup just use 1/2 water and 1/2 evaporated milk. I've done this several times with several of her recipes and they've always turned out beautifully. I learned this tip from a fellow commentator here on her ch. It was great chatting with you. Have a great/safe rest of the week. Happy baking... 😉

    I have a dumb question I never mix my Yeast up separately like that for fear that it won’t raise, because it’s too hot or too cold .I always mix it separately in milk/water that is lukewarm and then add it to the mix. do you ever have trouble with your yeast rising doing it this way just adding it to the mixture? I’ve tried several your recipes they always turn out super yummy however never ever used like that because I’m too afraid I know that probably sounds silly. Thank you for always sharing in answering questions I greatly appreciate it.

      I always do it the way she shows us and I've never had a problem with my dough not rising. I just make sure that my egg and milk/water are warm. If the milk is coming straight from the refrigerator usually 30 seconds in the microwave will warm it up to the right temp but I always test it to make sure it's not hot/cold. I just made her garlic and parsley filled buns last night using my stand mixer. I had no issues whatsoever. Hope this was helpful. Good luck. Happy baking... 😉

    I beat for 5 min+ it still didn't un stick from bowl. I measured by grams also. Do I keep mixing or take out let rest? I used active yeast.

      Hi love, scrape the sides and bottom then set at speed 2 again. If its still sticking, you can add 1/4 cup flour. Since i think the protein content of your flour is low.😊

      Hi dear, you can add more flour 2 tablespoons at a time until you can handle the consistency.
