Guyanese black & white pudding/blood pudding | recipe

  • 2 1/2 cups long grain white rice
    4 cups coconut milk
    1 cup water
    1 cup blended seasoning
    1 tbsp cookup seasoning
    1 tbsp chicken bouillon
    1 tbsp complete seasoning
    1 tsp seasoned salt
    1 tsp black pepper
    1 1/2 tsp sugar
    1/4 tsp cinnamon
    1/4 tsp nutmeg
    1 1/2 yards beef casings/ runners
    1 cup beef blood
    1 extra cup coconut milk for cooked rice
    1/2 cup extra seasoning for cooked rice 1/4 cup for each batch
    oil for basting
    blended seasoning should amount to 1 1/2 cups
    lots of basil /married man pork
    lots of fine leaf thyme & broad leaf if you have it
    2 stalks green onions
    12 cloves garlic
    Chili peppers or any peppers of your choice

    I am fascinated by the white pudding. I have never encountered it in Trinidad or at least the part of the country I live in. The other type is familiar but I don't eat it. Thanks for this, I learnt so much.

    Love your channel & recipes, & thanks for the links for the sausage stuffer & runners! Awesome!
    A few additional tips for the viewers, if that’s ok:
    An alternative to using blood is using ground hamburger meat, which by nature has some blood.
    My mom always said to under-cook the rice slightly and let it cool before proceeding.
    If salt beef is in the rice, shred it by hand and mix back into the rice.
    Also, stuff into the casing loosely so it looks a bit flat. The under-cooked rice will cook further and swell up to fill the casing nice and tight. Reduces the risk of bursting too.
    As far as using the stuffer, I’ve seen people put about 3 feet of the runner onto the plastic tubing, then feed out the runner as it’s being filled.

      I soak the casing in lime and vinegar over night, turn it inside out and remove most of the fatty parts. It's OK if you don't get to remove all of it once most of it is gone.

    Hi Candy, looking at the pudding makes hungry for some right now. I have everything I need to make it at home. I am NY where it is easy to get stuff.
    I know all about stuffing it manually because when I was a kind my mother used to sell it so when I was old enough that was my job. I have a mill with an attachment for sausage but sometimes I go back to the old ways.

    I live in Vancouver BC and I found a Lebanese Thyme or Zatar, that is similar to the Guyanese broad-leaf thyme in looks, smell and taste. Found in a Mediterranean Store in Surrey.

      One thing my grandmother use to do the place the ends in the hot water and it will fold up and won’t leak out abs she use evaporated milk Instead of coconut milk ..mouth watering

      No you don't, it cooks when you boil it, the color changes from dark red to black that's how you know it's cooked.

      Hi Stacey unfortunately no. I don't make it to sell this was actually the second time I made it because the ingredients are hard to find I had to purchase the casings/ runners online and the blood isn't always in stock at the store so selling this would be a struggle.

      Yes most ppl do prefer the white and to be honest the white taste better to me. And you know I'm always looking for ways to make things easier I was never going to use a funnel to do this it's the reason why I took so Long to do the recipe but anyway thank you for stopping by as you always do appreciate your support 🙏🏾 ❤️

      @@candythaglamcookIts da blood thats off putting. Has a teen I used to eat it back hm, but I was'nt aware it was made usin blood. Only when I came to the UK then I realise, never ate it for over 28yrs. I luv the white puddin with finger sour & gooseberry sour, but the mango is always a plus. I'm sure ur household enjoyed it.     I use a sausage stuffer as well... next time pull the casing all the way up on the tip, leaving about 2 inches. This will remove any air and the rice mixture will move smoothly into the casing.

      You can find it in queens ask around. I found it at the Asian store in my area if you have Asian grocery store there they will have it ask them it's usually frozen.

    What is cookup seasoning? Geera? Ground allspice? Every cookup recipe I’ve seen is different.

    Looking good, but something is wrong with your casing because normally you can see all the seasoning through it because the casing looks more lighter, but yours looks more on the brown side. Also you forgot to put a bit of grated ginger. Happy Easter to you and the familia.

      Nothing is wrong with the casing you can definitely see all the seasoning in there once it's cooked and I don't add ginger to mine but feel free to add whatever you like to yours. Everyone cooks different and that's perfectly fine. Thank you for stopping by have a happy Easter yourself.

      I found it in the Asian market. It's hard to buy online because it has to be kept frozen. If you have a Asian international store in your area they should have it. If you don't see it ask them they might have it hidden.

      There's no blood In the white pudding it's coconut milk. Black pudding I used cow/beef blood

      At the Asian international store in my area. If you have one in your area ask them for it you might not see it there they usually have it in the freezer in the back.
