    Ingredients:
    • Water - 2 liters (filtered)
    • Sugar - 4 cups/600 gms (any sugar will do, though prefer Sulphur free sugar)
    • Ginger - 200 Grams (crushed into small paste or small pieces)
    • Lemon Juice - 4 Lemons
    • Lemon Zest - of 1 lemon (to make lemon zest, grate 1 lemon on kitchen grater)
    • Yeast - 1 teaspoon (active yeast or baker’s yeast)
    • Utensils: Big size vessel (5 liters capacity)
    • Bottles: Only Cold Drink Bottles 1.25 lts (3 bottles) or 2 ltrs (2 Bottles) (Important: because only cold drink bottles can withstand high pressures, no other glass or juice bottle will, not even mineral water bottle)
    Process:
    Mix 4 cups sugar in water and heat till it mixes well. While it is half cooled, mix crushed ginger and stir it well. Let it cool overnight or till room temperature.
    Mix lemon juice and zest and leave it for 1 hour. Once everything settles, please take a sieve and cheese cloth or a hanky, filter the content in some other clean and sanitized utensil.
    Make sure you take out all the remaining juice by squeezing the pulp in Hanky.
    Activate the yeast in half bowl of luke-warm water and half spoon sugar. Once you notice that bubbles or froth has appeared in the yeast bowl (within 5-10 mins), it shows that your yeast has been activated.
    Mix the yeast in the filtered mixture and pour into bottles as shown in video.
    Keep the bottles in a cool and dark place in your kitchen closet or any dark place.
    Important: Don’t put extra Yeast, don’t be greedy, it will not speed up anything and will spoil the whole recipe. Have patience and follow the recipe as mentioned in the video or description. It will be ready in 7 days and if you have surplus patience, you may keep it refrigerated for 2-3 weeks and then enjoy.
    For best results, I suggest consuming it 7th day onwards as quality of water, ingredients and yeast plays a major role and results may vary from actuals. Keep a close eye, if you feel fermentation has been slowed down, feel the nice smell and enjoy the refrigerated drink for best experience. Happy Brewing!!
    Till 6 days, everyday release the excessive pressure from each bottle 3 times a day (this pressurized bottle is a good sign that your fermentation is progressing at full swing).
    By 6th day, fermentation should stop by itself (or by 7th day maximum).
    Your drink would be ready with decent amount of alcohol. Put it in fridge and enjoy it cool. Note: use only filtered water and sanitized bottles and hanky. Don't shake the bottles too much after 3rd day. You will get wonderful results. Ask me anything in case of any further help is required. Enjoy!

    Guys, beer is almost ready with around 4% alcohol and it's pretty good to drink on 7th day. So you can work on your batches for continuous supply of alcohol during lockdown. Enjoy the yummy drink and refrigerate it on 7th day. Awesome and tasty beer is ready to be consumed. A TIP: please make sure that you leave the bottom leftover in all bottles as it contains the debris and yeast. As such it's not harmful, but prefer to leave the bottom half inch drink in each bottle. Keep brewing and keep fighting Corona. Stay safe, stay inside and respect the Lockdown. Thanks

      @@himanshuupadhyay4891 4% is just around 5th day. It will increase in coming days. Increase the sugar by 1 cup of you want.

      भाई साहब yeast flavour is very dangerous , instead you have killed natural yeast of ginger. Original ginger beer need not any dry yeast but have patience.

    Hello brother. Thank you so much ... Tried the cola ginger beer for the first time using wild yeast from grapes ... Tasted good but not so much ... I guess I added more sugar .. became too sweet. I tasted the beer in 1 week and 2 week time .. huge difference.
    Now I am using the same batch of yeast for this one (no cola/coke). Let's see how it goes.

      If pressure is building up, you can open. Otherwise just shake a little bit and keep them back in dark.

      No, because Tupperware Bottles cannot withstand such high pressures. Please try to use only cold drink Bottles which are meant to withstand pressures. So i suggest to avoid using any other Bottles. Thanks 🙏

    Hi Bro thanks for a good video. I have used ginger bug and coke bottle. After one day of botteling I can see lot of sedements in the botrom of bottle is it fine sedements are like white balls. Is this normal or my batch is gone wrong?

      Hi Mr. Sahni, I suggest to watch the batch for another 3 days. In case fermentation happens well and then let the sediments rest at bottom of the bottles and change the bottles 5th day and throw the bottom layer out. I suggest to carry on with the batch.       Jee maine kabhi try nahi kiya hai, but CO2 hi to banana hai. Agar wahi supress kar diya to fermentation kaise hoga. Mai suggest nahi karta charcoal daalna. Aap 1 bottle me try kar sakte hain, sab bottles me mat daaliyega.

      No please don't blend it too minutely. You will find it challenging to strain it. Even if you wanna use blender, just crush it, don't make a pulp. Hope you understand.

      Ginger is natural yeast.. don't peal it, just wash it lightly.. you don't need yeast..

      Thats absolutely right, but unfortunately we don't get organic ginger in market. Moreover, they already wash it with acidic substances to clean and hence natural yeast goes off.

    Started my very 1st batch on last Saturday ..and planning to bottle it and keep it in a fridge this Saturday.. Do you think I should give some more time for fermentation? Or 1 week is sufficient? Not looking for more than 4% of alcohol

      @@vinayprajapat9026 today I kept bottles in refrigerator ..it tastes bit stronger maybe it is because of ginger but no foul smell. Sugar has balanced out and not too sweet. I felt the alcohol there's alcohol in it while tasting but no way to measure it.. More updates to follow once I get them out of fridge

      As this is made by fermentation and not by distillation process, it is generally safe. But just to remove any doubts, when it is ready, take a small sip and wait for some time, say half an hour. If nothing goes wrong, you are good to go. Home made drinks that are made by distillation process are dangerous.

      Just till it is about to reach boiling temperature and immediately switch off the gas. After that follow as per instructions mentioned in the video or description section. I have mentioned recipe in English in description section.

      No, please don't. It will completely spoil the drink. Please make it as per recipe and taste it on 5th day evening. If not enough prepared, then it will be ready to consume on 7th day evening time. After that please keep it refrigerated till you consume

      If you are using cold drink bottle, don't worry, it can withstand 6 Times of normal pressure. Seems your yeast is doing excellent job in fermentation. Try to keep an eye for first 2-3 days and do it 3-4 times a day, discharge the gas slowly else liquid will flush out of the bottle. More the pressure, better the fermentation. Do not worry and don't be afraid of anything. If you have used some other bottles, then it will be a matter of worry. Good luck!

      Sir use Sugar as 600 GM's, ginger 200 GM's, active yeast 1 teaspoon. If active yeast is not available and you are using yeast starter, then use 100 ml of yeast starter. For other details of ingredients, please check the description box, I have mentioned everything is detail. Thanks

      No , we cannot distil it. It's not meant for cooking purpose. Distillation involves boiling of this content and it's not recommended. Distillation is entirely a different process. I highly suggest, please don't do it with this recipe. Thanks for understanding!

      No, it's not mandatory. But please make sure to bring it to room temperature before mixing yeast and then bottling.

    I too made almost with the same step but with 6 litre of water and 1.5 kg of sugar used approx 80 gm active yeast. After 21 days as per taste I feel the alcohol level may be around 16-18%. I don't have hydrometer but my experience says it 😄. Today I am going to have it. Adding in this receipe of you can't grate the lemon jest than you can peel the skin of one lemon and boil it with the ginger. Yes but you will have to take trouble to release the gas twice a day choose your time I use to do it at morning 0900 and evening 2100.

      No methanol if you are not heating up the liquid after fermentation started. Don't worry, you are not the only one who is making it. Enjoy it like others without any worry. Take care!

      Prefer to use traditional sugar, but if you don't have it, you can use raw sugar. Flavour will come out best with normal sugar.

      No please don't mix the yeast in the content. It will spoil the taste. And once you will try to mix, you will shake it, shaking I don't suggest as you will lose all the carbonation. If you want a flat drink, I mean without gas, you can go ahead and do it. But settle down everything at the bottom before Consumption. Hope it helps, any further questions, let me know.       Yes you can, but make sure to keep it refrigerated and before using next time, take it out and activate it for 2-3 days if required and after usage, keep it back in fridge. Hope you know how to activate it when required. Thanks

      Yes you can definitely use organic jaggery, but it will change the taste of the beer and is not a suitable match. However, if you want to experiment, you definitely can. I didn't like that flavour, tried already.

    Sir, metal should be avoided after the fermentation process is started. I left the boiled ginger in sugar syrup for one day in steel jug, before putting it for fermentation. Is it safe to leave this long in Contact with metal.

      Fermentation time will remain same, reduce the sugar content to 1/4th please.

      Use 3 times of active yeast. So try using approx 3 tsf of fresh yeast. It should work for you.

    How to sanitize the plastic cold drink bottles, which we use to store the beer

      Either using baby bottle sanitizer or using a bit of hot water at temp which should not melt the bottle after washing the bottles properly with brush and tap water.

      Hi Mr. Chran, for 16 ltrs of water, please multiple everything by 8. I have mentioned everything in the description box including step by step process. I suggest first please make a small.batch of 2 litres, see how it comes and then make the rest of 14 ltrs

      It becomes highly pressurized, so it will become difficult to arrange empty cold drink bottles. Still in case you can manage such a big batch, multiply everything by 8. Ingredients are mentioned for 2 ltr batch clearly in the description box. Please be careful while making such a big batch. Even you can divide it into 2 batches.

      16 litres water, 4.8 kg fresh organic ginger, 12 teaspoons of activated yeast as shown in the recipe (please activate yeast like I have shown), 32 lemons juice, 5-6 lemons' zest as I have shown in the video. You have to keep everything in fridge after 7th day, so make sure you have that much space in your refrigerator. Hope it will help.

      It's already at its max. More sugar can lead to more alcohol, but that will lead to more sweetness in your beer.
      If its prepared the way I have shown, it will yield results as normal strong beer.

      Hi, thanks for the positive comments. This beer tastes a bit different in taste than traditional beer and is comforting in taste rather than being bitter. This recipe is quite different from how traditional beer is made. It will not be bitter and will be a bit on a neutral or sweet side. You can change the quantity of sugar being used as per anticipated taste, but remember any reduction in sugar will also impact the proportion of alcohol in the final brew.       Sir there is no way to check without lab, but if you are not boiling anything after adding yeast and not diverting from the recipe, it's absolutely safe.       Hello Mr. Dev, if you refrigerate it after 7th day, you can keep it for around 1-2 months. But if you are consuming it after 3 weeks onwards, please dillite it with soda and ice because alcohol levels keep increasing as you keep it for long. Hope it help, have a nice day!

      Not in recommended quantity. You have yeast in breads etc already. If you will use more than recommended quantity, it will also spoil the taste. Don't worry, go ahead and use it. Just make sure you are using active yeast.

      Update 28july2020: my fermentation has done on 27july2020 12pm (no more gas or bubbles) so i refrigerate and drink at 27july 11pm night,
      I made 1.5l of ginger beer and i lost around 400ml (at gas releasing time it overflowed) so i have 1.1l beer, and i shared with my brother, i drunk 550ml of approx beer and i got नशा like same i drunk 750ml of kingfisher strong. (I do not have hydrometer for checking alcohol)
      And yes i used bread yeast (local brand in my area)
      In moral my 1st batch is very small but now i am going to make bigger 2nd batch 😉

      Methanol is a byproduct while making country made liquor that involves cooking and boiling. Our process doesn't have any cooking involved and we are not distilling. So you can feel safe if not cooking anything.

      Yes absolutely correct process followed. Yeast and other sediments will settle at the bottom in all bottles, just leave them at the bottom and don't shake the bottle while pouring into glass. Don't consume those sediments and throw when bottle goes empty. Your drink is almost ready to be enjoyed. Do share your feedback after consumption. Take care

      @@MGTheories i have filtered the solution in seperate bottles and kept them for cooling. There was not much yeast left in the bottom of the bottles.

There could be a possibility that while you were pouring into other bottles, it got mixed up a bit. Anyways, nothing much to worry about now and enjoy your drink. It should be good to consume.       If bottle is of 1 liter volume, please divide the quantity by 5 and balance by water. If you are using yeast, then make sure that you are using 1/5th of a teaspoon i.e. only a small pinch of it. Hope it will help.

      Kadwa means fermentation is going on. Wait for 5 days, then taste a spoon of liquid and tell me how it comes out. Don't worry, I'd you have followed the recipe exactly the same, your beer should get ready.

      Sumit Mallik Hi Mr. Malik, thanks for the encouraging response. No need to buy brewers yeast. Just buy a simple active yeast of any brand from market. You will easily get it from any grocery shop in your area. I don’t suggest to buy any expensive yeast, it’s of no use for this product. Online even active yeast will cost you more. From market you will get it within 30-50 Rs. It’s also called bread making powder. Just make sure that active yeast is written on the packing. Buy a small pack only as shelf life is very less.       Yes it is absolutely fine to be consumed. Just filter the sediments and dilute it before Consumption. Use soda for best results with ice. So do not worry about consumption. Hope you have followed the recipe the way I mentioned my video. Make sure it was left at dark place if not in refrigerator. If yes, then no worries, just have a try, you will come back to day thanks.

      No usually in these recipes it's not formed untill you heated the content while it's being fermented. And moreover methanol is a constituent of distillation. We have not distilled anything. To be double sure, you google a bit for your satisfaction.

But when we took it neat with ice... It started hitting... Good result...I guess 28 day will better for inducing highness

    What is the life span of the wine when put inside the plastic bottle? Can it last for about a year?

      I dont suggest usage of plastic bottles for more than 4 weeks. Please try to use glass bottles instead. If you are keeping them for ageing, please use glass bottles and while putting the lid, make sure there is no air inside. How to achieve that would be done very carefully, just fill the bottle till brim and then seal the lid. You can now keep it for 6 months of even 1 year under optimal storage conditions.
      However, if you are not able to use sanitized containers, good quality water or any other lack of quality issues, plz don't store for long.

      Hi Mr. Mahesh, sorry for late reply, somehow your comments go ignored from me. For 5 litres 2 kgs sugar is ok. 25 gms yeast is also ok, infact you can reduce it to around 10 gms as well. Hope it will help. Thanks for watching and have a great day ahead.

      @@fayyazmayo2801 sir wo distillation process se banti hai, ghar me nahi bana payenge. Wo ek bilkul alag process hai. Maaf kijiyega, wo illegal bhi hai. Aap is recipe ko banayiye or kuch naya try kijiye. Apko pasand aayegi.

      Its already at max level. Sugar is responsible for alcohol, if you will increase sugar and all of it doesn't ferments, then your beer might come up too sweet.

    Branded beer 🍺 will have more foam in it. If we pour fast , glass will be filled with full of foam.
    But the beer prepared in home doesn't have that much foam. What is the secret Sir?

      The secret is these commerical beer manufacturers add extra CO2 to increase the froth levels. Commercial products are never pure and always contain preservatives and chemicals.
