    Recipe:
    2 Front Trotters
    Ginger
    Garlic cloves (10 or more is fine)
    1-2 Cinnamon Bark
    1-2 Dried Chilli
    2-3 Cloves (not too many)
    1 Star Anise (not too many)
    A few Bay leaves
    1 tbsp Sichuan Peppercorn
    Dried Ginger (a few pieces, optional)
    3-5 tbsp dark soy sauce*
    3 tbsp light soy sauce*
    1 tbsp sea salt
    1 tbsp white pepper
    3-6 tbsp Shaoxing wine
    *depending on the sodium level of your sauce, you may not add too much or it will get too salty

    If you don’t want to pluck, you can sear/ burn the hair off. Over flame ( gas stove top) or get a pan really really hot and rub the meat over it. :)

    Is dark soy sauce and sweet soy sauce the same thing? Pls reply me, appreciate it 🙏🏻

      Not the same. Dark soy sauce is only salty with no sweetener. And the flavour is different from sweet soy sauce as well. 😄

    Hi, I have never cooked pork front trotters nor hind legs. Can you explain to me why you've chosen to cook the front trotters when I was told the hinds legs meat are more meaty and tender? Please advise. Thank you.

      Actually it's cheaper and smaller in size.. Usually the hind leg I will need to cook 3 times if buy whole.. So I prefer to buy once and cook once instead of freezing... Plus the tendon is my favourite so I prefer front legs

      Front knuckle comes with meat as well as tendon, while hind trotters only has tendon which is more suitable for the vinegar ginger dish...

    Is dark soy sauce is sweet ? And the light soy sauce is salty ? Thank you...

      Both are salty.. But my dark soy sauce is low in salt.. U need to taste ur soy sauce to be sure. If it is salty, u need to adjust accordingly

    Sichuan pepper corn can replace whole pepper corn or not?

      Whole pepper corn quite spicy.. Smell is different.. U can use whole dried chilli.. Hope it helps.. If use dried chilli. Leave it whole.. Dun cut it as do not want the seeds in the gravy.. Only need 1 to 2 chilli

      Actually if no wine.. Suggest add more ginger or add in spring onion.. Mainly to reduce the porky smell.. Wine cannot add too much, if not dish will be bitter.. So if the smell is ok with u, u can skip the wine

    Which part of trotters to buy thats has not too much fats?

      Front i think.. But u could also get pig skin and remove the fats.. Get leaner meat.. Cook the skin n meat together.. Shd be nice too.. This way.. It is lesser fats..

    How about if you roast it in the oven before boiling it, will that help with the hair?

      Oven i not sure.. I know can burn with a kitchen torch.. Or against a hot pan.. Or "shave" with a knife.. I pluck cause not much hair.. Maybe next time i try other methods..

      Please make sure to clean your sink... However if yours is not stainless steel sink, then might have to use something to hold the meat as you clean.. Mine was thoroughly washed before i put the meat inside.. And also please wash the meat thoroughly after you touched them for hygiene..

    I don't have a pressure cooker, so can I use an ordinary pot or casserole? How long will it take to cook if I use the latter? Thanks

      Casserole on low heat covered.. Stirring occasionally to move the pieces for even cooking n preventing burning. It will take longer time.. Have to add more water as it will dry up fast

      The length of time between 90mins to 2 hours depending on the size of meat n the cooking temperature. Meat must be fully submerged in water. Pressure cooker can keep the moisture in so I did not need to put that much water.

      Do it only if you have a clean sink. Mine is stainless steel and had been cleaned before the meat was placed inside. Please make sure to clean the sink before you use it for cleaning your ingredients before cooking. Also, do remember to rinse the meat thoroughly after cleaning them. It is common for many to choose stainless steel sink for such usage, but it is definitely ok to use some other pail or containers to hold your ingredients when you wash them if you think your sink is not clean enough.
