    it's a basic pate a bombe, essentially a ribbon stage sabayon cooked out by 121 degree ( softball sugar )

    What is he making with the egg yolks and the liquid sugar?.. basic something. Didin't quite catch the word. Its the first dessert by Joe Maccafferty. Can you please tell me?

      I believe it is "pate a bombe". it is a french term used for mousse base.

    Could anyone help me please writing the second recipe? The dark chocolate and raspberry rose recipe. I'm not English, I don't understand everything and I'd like to be more accurate.

      kary TL Food grade edible silver leaf. the same can be purchased in gold. Being a mineral, it just passes right through you, it's perfectly safe to eat.
