I cook using both technique one thing that make a different is for fresh rice you really need to cook the rice with less water or the fried rice will be to wet, so you really need to make that batch of rice specifically just to cook friend rice , while using left over rice you can cook alot of rice and use the left over rice for cooking fried rice using left over ingredients that's the point of fried rice..... not to mention left over rice is more forgiving and not gonna broken into small pieces , this really good for beginner cook .

Depends on the rice. In the UK most of the takeaways use par boiled rice because it's cheap and profits are a premium. But having said that it's quite robust so it does the job. okay . As for basmati,it is not really that goodfor Fried rice especially if you use it warm, it's too delicate, it goes better with pillau and biryani., as there is not so much agitation..

I use calrose rice and slightly under cook it.
