French Onion Soup
*Serves 4
Based on a recipe from seriouseats.com
4 tbsp olive oil, plus more for bread
3 pounds yellow, sliced 1/4 inch thick
1/2 cup dry white wine (sauvignon blanc)
2 quarts homemade or store-bought low-sodium chicken or beef stock
2 sprigs thyme
1 bay leaf
2 tbsp worcestershire sauce
1 teaspoon cider vinegar
8 bowl-size slices rustic bread, toasted until crisp
1 medium clove garlic
8 oz Gruyère cheese, grated
2 tablespoons freshly minced chives, for garnish
Kosher salt and freshly ground black pepper to taste
