    "You have to be in the kitchen for an hour." You say that like it's a bad thing - just watch RUclips videos while cooking, preferably past Preppy Kitchen videos. I love the "pass by every once in a while" demonstration, just in case folks have no idea what passing by a pot entails.       If you cut the onions in half they won’t roll off the cutting board…. Every chef does that…

    A french man taught me to make this soup many years ago. He told me I could put the wine or not and that it's made traditionally both ways. I'm not a fan so i don't put it in and it's still absolutely delicious and one of my favorite winter soups. He also told me that the longer it boils the better it tastes. As you take out to serve you add more water and boil again. In the country side old farmers would leave a pot by the fire and just add onto it whenever it boiled down. Eventually it's almost black but it's incredibly flavorful. You always had something warm and nutritious when you came in from the cold.
    Also for vegetarians you can omit the broth and use plain water and it's still amazing.

      To me, soup doesn’t have much flavor without a decent stock. I make a big vegetable stock & freeze by the quart. Lately, I’ve canned it, using my pressure canner (water bath is only for high acid foods). My recipe comes from “Love Soup” by Anna Thomas…great soup book!

      Very cool. Also, it's not called French onion soup because it's from France, it's called that because of the thin cutting technique of the onion.

    I made your Chicken Pot Pie Soup recipe this morning. Despite my having no milk, which I hesitatingly replaced with non-fat evaporated milk, the soup came out so so good!!

    I like to butter the bread slices on both sides and toast in the oven before adding to the soup. If im feeling really French I add brie. Cheers!

    @john you're absolutely right when you say if they say 20 mins to caramelise onions they're lying. Hahaha! One recipe I often make is a caramelised onions and Roquefort quiche. The onions do take nearly an hr to be reduced n properly caramelised. What I do it use my food processor to slice a few kgs of onions, get a huge batch of caramelised onions done and freeze half to use in soups, Stroganoff or with burgers.

    I didn't have oven safe bowls, so I put the soup in a pyrex dish, bread and cheese, and it turned out just as good (if I do say so myself😊) Simple, easy to follow, easy to make recipe I make every week now 🤗🤗 thanks!

    Soooo delicious! Hadn’t made onion soup in years but had too many onions so watched a few videos and settled on this one and it came out perfect. I followed the recipe except I added about a tablespoon of better than bouillon because my store brand broth was weak. Also, I didn’t have wine so I used a little cooking sherry.
    Really an excellent recipe and easy to follow video. Thank You!!

    Many years ago, The Galloping Gourmet said if you keep your knife wet, you won't cry when cutting onions. I have used that trick for over 30 years. It works!

    Hey, John, I *used* to have a problem with tearing up whilst chopping onions, but my Mum told me to eat a slice of raw onion *before* chopping the rest and you won't have teary eyes ever again. That was 40 years ago, and I haven't teared up once since.

    So many recipes give that 20 minute time frame. As you stated, it takes ALOT longer than that, but it is well worth it! Your recipe looks drool worthy!🙃

    I love French Onion Soup!!! I will make this for sure...The trick for not having tearing eye while cutting onions is: to turn the gas burner on and cut the onion next to it (not too close so you don't burn yourself) the burner absorbs the gas the onions secrete which is part of the onion that makes you cry. I have never cried since using this method!!! Try it!!!

    It usually takes me around 40 minutes or so to caramelize onions. I set an alarm and stir every 5 minutes at first then every 3. It takes forever but I could literally eat them with a spoon. Yummmmmmmm

    Idk if it was my stove (it probably is my stove) but it took two hours for them to get caramelized and it ended up yielding so little 😭😭😭I’m like I chopped all of you onions for you to shrink like that?? Lollll the whole house smelled like onions and cheese for a whole day after 🤣🤣🤣 but it was delicious!! Definitely just gonna have to do more ! Thank you for sharing this recipe! I’ve always wanted to make French onion soup as it’s one of my fav soups but it always looked so intimidating you made it not so intimidating and provided alternatives in your blog for our lack of oven bowls and for that I deeply thank you😊😊😊

    John, like you, I have a very hard time cutting whole onions into slices. I've learned to cut my onions in half vertically. Then I'm able to slice them more uniformly & in thinner slices.( It gives the onion more stability to slice). I've never used flour in my recipe, but I'm giong to try it next time I make this soup. Thanks for the recipe!

    Onion Tip: Peel all and then use a mandolin to make quick work of it. Add shallots and garlic to the onions.

    This was a great recipe to watch, and covering the onions with the lid for the first cook/sweat is key! I laughed when you said that people who tell you it takes 20 minutes to caramelize onions are lying, so true I remember years ago reading that and then wondering what am I doing wrong when it takes me 3 times as much time lol. Thank you for this video, making this today and wanted to watch someone else make it as a refresher.

    Just bought all of those ingredients. 👍🏻 I hope mine turns out like that, and I hope Montezuma doesn’t come creeping around my house again an hour after everyone’s finished eating. I buy all fresh ingredients, same day, super clean dishes to cook with, but everyone still gets ill when I cook 🤷‍♀️

    I actually use homemade croutons from sourdough baguettes. Cube the bread, melt enough butter to coat the bottom of a fry pan, and throw in the cubes. I sprinkle a little garlic powder when browning the cubes. When nicely browned, throw some in the soup, add the cheese and stick under the broiler. Take out of the oven, place a few more cubes on top and serve

    This is one of my go-to dishes for winter treats. I cook the onions at a lower temp for way longer (but, hey! this is cooking, not particle science!). I also like to add red onion into the mix 'cos I'm kinda radical... How about making a beef stock recipe vid? Creating stocks was my intro to culinary school and my tutor said that once we'd mastered the creation of stocks, we'd never have to do it again because of the profusion of good quality stocks available on the market. Despite his claims, I still continue to make my own stocks for my restaurants.

    I just made this for dinner. Yum!! I followed the recipe to a T except for the onions. I used 1 lb of regular cooking onions and 2 lbs of sweet Vidalia onions. It was rich and delicious and just perfect for a cold winter day. Love your videos. Happy New Year to you and your family!!!

    I made French onion soup in the fall, and it did take about an hour to caramelize them. Sadly my soup didn’t taste as good as when you order it in the restaurant, which I was really sad about.
    I thought I would never make it again, but I’m thinking I will try this recipe to see if it better :)

    I'm so glad I dont live next door to you. I would be over every day. Haha. This is my favorite soup. I order it at restaurants but never made it. This seems alot less complicated than alot of other recipes. Might have to try making it.
