The whisk is key for Maicena, I stirred with a wood spoon this morning but im not as skilled as my grandma was and about 10 lumps bumped my tastebuds... I love the corn starch add in, great consistency this morning

What is your favorite type of Puerto Rican CREMA?! mine is 1. Avena de Arroz (Goya) 2.) Avena de Maiz 3. Maicena (your version now) 4.Farina, but you really need to be on cutting edge here, no lumps for farina, thin but not watery not thick.
The way I avoid clumps is by stirring and dissolving the cornstarch in the milk while it is still cold before cooking it on the stove. Other than that, the recipe is pretty much the same . I learned this tip long long time ago.

I made this kinda lumpy but strained it. My 8yo saw me take 1 little taste and he ran away with it 😂
I always make it and think yes no clumps then I dig in and there’s 100 😭 clumps
Try whisking it constantly, especially in the beginning. It may help to sift the cornstarch.
