How To Preserve Grape Leaves In Two Ways & Tips By Aysenur Altan

  • Grape leaves provide full of vitamins, minerals, antioxidants, and fiber. It is one of the essential ingredients in Turkish cuisine. Grape leaves can be eaten alone or stuffed with ingredients (sarma) of your choice including rice, spices, and seasonings, with or without meat (olive oil version).
    In this episode, I am going to show you how to preserve these tangy sour tastes to use year long in the kitchen.
    Ingredients for preserving grape (Vine) leaves
    2+1/2 kg grape leaves
    For the salty pickling water: about 1-liter water + 1/3 cup pickling salt
    about 1 cup or more pickling salt for sprinkling inside the grape leaves before rolling them in batches
    I used 3, 1-liter glass jars and a 1+1/2 liter jar
    Second option to preserve
    After blanching in the water and cool it completely you can put them in freezer bags and freeze. But in the first option, it seems to preserve the leaves' flavor better.

    I love that you use the water from washing grape leaves for your house plants.
    I always use the water that I par boil my rice in to water my orchid and fig tree after it has cooled. It helps to quickly grow their roots. Natural fertilizer.

    I have recently visited istambul and have developed a love for dolma. Today I harvested grape leaves from a nearby vine. Autumn is near and I want to save these leaves for winter so I am preserving the leaves with your method. ❤thanks for sharing 😊

    This was a wonderful demonstration. I enjoy your cooking and the way you explain the recipes. Now I have to prepare the grape leaves I picked today. After preparing the leaves I often put them in Food Saver bags and keep them in the freezer --they stay for years.

    I am in Canada … I just discovered your channel…I love it! The soft music in the background is so perfect…. So many people now a days have dance music accompanying them and they shout! You are really like a friend in my own kitchen ,,,, our neighbours have a grape vine and I was allowed to pick the grapes and leaves today so I’m going to try your preserving method and the cherries filling ….     Thank you so much for this recipe. I have a very small urban lot in St. Louis, Mo, USA in which I have turned all my yard into a garden. A wild grape vine that volunteered itself on the side of my house. I always think of volunteer plants as gifts from G'd for all the hard work I put into my garden. Last year, I got enough grapes to make wild jelly. This year, I will as well, but I also wanted to do something with the leaves and have been searching for recipes. Do you know if these can be canned for long term storage without refrigeration? Even if not, I will be making these, and giving some as a gift to my Muslim neighbor who makes the most delicious dolmas. Then, maybe she will gist some of those to me!

    Fabulous food.Thank you for posting. I picked some leaves today as I was Summer pruning my vine. I thought it's a shame just to chuck them on the compost heap and as I love dolmades I thought it's time to try preserving them. Greetings to you and Istanbul.

    Salam sister, I enjoyed your video today. I have been in the process of picking grape leaves from my vine and blanching and storing them for later use. Some I put in the freezer and some I put in jars. We have a very similar way of pickling them but we keep the leaves open as is. I like how you folded them and inshallah I will try your way.     Try wild grape leaves. It is more tasty and has little crunchyness. You just have to soak it in boiling water, dry it and put it in the freezer.

    These can be rolled, just rolled up not ends folded in, set upright in jar. After blanching roll them in loose bunched, set upright in jar. Add 1/2 TB salt and boiling water to hot jars. Clean rims, add lids and ring TIGHT. Flip over onto counter doing one jar at a time. Leave alone 24 hrs and store in pantry. Rinse leaves before use and stuff as you wish.

    Thank you for this. I buy all my grape leaves for dolma from Turkey. The grape leaves here in California seem too thick for dolma. Turkish grape leaves are much more tender.
