Chicken Fried Rice on the Blackstone 22" Griddle | COOKING WITH BIG CAT 305

  • Homemade Chicken Fried Rice for Father's Day!!! This is now a tradition as I made it last Father's Day and it came out excellent!!! Happy Father's Day everyone!!!
    Ingredients:
    1 Cup diced onions
    1 Cup diced carrots
    2 Tbs sesame seeds
    1 Cup diced shallots (green onions)
    4 Skinless chicken thighs diced
    3 Eggs whisked
    3 Cups white rice cooked the night before
    Garlic Soy Butter:
    1 Stick real butter
    1 Tbs minced garlic
    1 Tsp soy sauce
    Yum Yum Sauce:
    16 Oz Mayo (Dukes preferably)
    1/2 Tsp Garlic Powder
    1/2 Tbs Ketchup
    2 Oz Melted butter
    1/4 Cup Water
    1/2 Tsp Paprika (Smoked preferably)
    1/2 Oz Sugar

    I am new to the black stone, I have the 22” for about two weeks now. I.followed this and cooked it last night. I could have used more veggies. BUT WOW it was good. THANK YOU!!!

    Just love watching your videos. One tip for those that don't know. You can mix up your butter, garlic and Soy (or anything else like that) then fill freezer trays with it. You can freeze it for up to 6 months or so. When you need some, you simply pop out the one or two or three that you need and put the rest back in the freezer.

      Thanks Michael, its not as easy as it looks making art out of food. Especially when it's still cooking while you are making it. The original plan was to make the sun in the top left corner of the Blackstone out of the scrambled eggs but I changed it at the last minute thinking it would only give me a minute or so before those eggs got really overcooking and dark LOL.     One thing I do like to do is throw the fat trimmings, whether it is chicken beef or pork, on the hot griddle before cooking and render down the grease/oil from it. I then throw the overcooked parts away and start cooking on that oil to preserve as much flavor as possible.

    Looks great. I am a griddle newbie and can’t wait to try this one. How high do I set the heat? I don’t remember hearing you mention that. Thanks

      I try to cook everything on Medium heat. For this recipe you are really only cooking food that is chopped up so you don't need it too hot. Then you are adding rice that is already cooked. Medium (350-375) is the way to go. Thanks for the comment Ben!!!

    Looks good! I'm trying to decide between the 22" and the 28". I like the portability of the 22 but worry about the hood on that one getting greasy inside and running down onto the deck or patio when I open it. Or, being more of a pain in the rear to clean. Any issues with that?

      Hey Julie, thanks for the comment. Honestly I really never use the lid on the 22" for cooking. It's good to close when done cooking until I can clean it and it keeps the shape of the cover but it is not very air tight. So when I do need to steam or bake something on a rack I will cover it with a dome. I LOVE the extra space on the 28" and the one I have is the Adventure model so I believe it is portable too. Although I have not broken it down yet. Bottom line, if you do a lot of camping or think you will take the griddle with you get the 22" as it folds pretty compact. If not, get the 28". Either way I think you will be happy. Good luck!!!

    Just wondering how many people you cook for? The reason I'm asking, I'm wanting to buy a griddle. Not sure if I want a 22", or one of the 4 burners. Thanks.

      Great question and thanks for subbing. I normally only cook for 2 so the 22" is more than enough room. However, if you have the room (which I don't) I would go bigger just because you can cook more food at once and use the cool zones to your advantage. Hope this helps...

      Thanks for stopping by. The 22" is good for someone like myself if you don't have much space and you're only cooking for a couple people. If you have the space I would go for the 28" as you can fit a lot more food all at once instead of having to take food off once its done.

    FYI, you should teach to use two cutting boards ,one for proteins and another for vegetables to avoid cross contamination food poisoning. Which is deadly to elderly and young children! Also when you cut your veggies the same size they will cook evenly at the same time. Just so you know! Chef
