    As a Scientist myself I can say some of the best discoveries in our history are due to experimenting exactly like you do it Big Cat. You keep doing you. Forget the haters!

    I enjoy your experiments. I find them helpful. I m glad you are back. I was worried about you those few months. I got a tip from In and Out burgers. When you flip your burger put a spot of mustard down and lay the burger on the mustard. Don’t know what it does but it taste good and smells just like In and Out. I know you don’t have In and Out Burgers there but most people have heard of them. We are in California. Love the view of the lake

      Thanks Marlene, appreciate your concern. Lot of life stuff going on at that time and honestly needed a break. As far as In and Out I've been there before (Love Cali). I will definitely consider trying the mustard spot, I did not know that's what In and Out did but I'll check it out. Enjoy the rest of your weekend!!!

    Great video, Mike. Montreal steak is my go-to for everything. I also like your #1 pick as my channel name is 4 Seasons BBQ. People always ask me how I came up with that name. I tell them I BBQ all four seasons, and the four best seasonings are salt pepper onion and garlic. Have a great Easter, Mike.🧂🌶🧅🧄 I know, it's the wrong pepper, but it's all I could find, lol.

    Always enjoy your comparisons Mike. I'm not surprised about the one you picked as a fav. I have salt, pep, gar pow, onion pow, mixed up in a dredge at all times. A fun comparison I did a while back....our family all love buffalo chicken wings on the Blackstone, I thought do I really need to add butter, garlic, vinegar, worcestershire, and such to my good ol' go to FRANKS hot sauce. So I did some with just Franks, some with a little of the other ingredients, and some with more of the other ingredients. Had the kids and and there spouses over and taste tested. Found most liked it with a "little" of the added ingredients. Fun stuff. Happy Easter.

    I watched a video years ago when blackstone was new. A guy was using salt, pepper, and garlic powder, and he said to use 30%, 30%, 30%. My wife said he was missing 10%. We started using it and called it 30-30-30. We recently started adding onion powder. Now we and all our friends call it 30-30-30-30 😅. Love you show and the view!

    Great call on adding garlic and onion powders. I like the way you smash your burgers, however I have been following the scene,
    and many seem to like crispy and crunchy burnt perimeters. I'd tilt the smasher in order to create crispy edges while maintaining a thicker, juicier core.

    Over here in Germany, there is the Urban Legend that you should not season the Patty with anything but salt and pepper...
    I never believed, and so you see, it can be done better just adding garlic and onion powder to salt and pepper...🙂
    There is some seasoning from dry garlic and onion Flakes (no powder!) that could easily be combined with coarse sea salt and peppercorns in a battery powered kitchen mill. So you have a good seasoning on the patties with just a push on the mill button.
    I will definitely try this. Smashed Burgers (I really like the Oklahoma Onion version) are not common in my country.
    Cheers, Bernd

    • @cookingwithbigcat
      @cookingwithbigcat  Год назад +1

      That's a fantastic idea. I used to use an electric pepper/salt mill all the time. And with just the push of a button it would save a lot of time when in this case time is of the essence. Appreciate the idea!!!

    This is exactly why so many RUclipsrs are selling "SPG" seasonings. It makes everything taste so gash darn good. And yes, add Onion powder as well. I've used these individually for +30 years. They live in shakers on the back of my stove. Just be sure to use POWDERS! Not that crap with about 90% salt. You are already adding salt.

    Try adding some smoked paprik.. It adds a smoky flavor without the charcoal which is great for griddled cooking. I make a mix 2 parts salt, 1 part black pepper, 1/4 part of each of the following onion powder, garlic powder, 1/8 part smoked paprika. Place in a shaker and sprinkle the mixture over your burgers steaks most all meats especially when cooking on the grilled. This is kind of an all purpose seasoning you will reach for time and again.

    Great experiment Mike, I also like the garlic & onion powder added. Next experiment with the smash burgers maybe try grilled onions on one, raw onions on one & maybe grilled green peppers on another. Gives you a excuse to make smash burgers again. Now for the so called scientist's. Screw them you do not need to justify yourself. I for one lover your once per week video's & the simplifiying it. Why over complitcate things?
