How many staff can one have in a mini bakery?

It depends with the size of oven and volume of production:for smaller oven producing less than 1000 loaves per day 2 are enough:For large rotary ovens like this a total of 6 could work

WHY NOT USE WAX PAPER FOR BREAD COVERING WHICH ARE BIO DEGRADABLE & CAN BE RECYCLED, UNLIKE THIS POLYTHENE PLASTIC WHICH AIN'T ENVIRONMENTAL FRIENDLY & ARE OF COURSE ENVIRONMENTAL HAZARD

Thats a really great question!😃 Bread is necessarily packaged in a plastic bag to increase its shelf life and prevent it from drying out.
