This is PERFECT!!! I've been thinking about deep frying like this for myself and Miss Kathy. With just 2 of us, this is perfect for our fish fry nights.
Hate to heat up a gallon of oil or more for what the 2 of us will eat.

So the question is naked or breaded...next time we gotta get the breaded going...but I am telling you this griddle technique is a life saver as no one likes stinking up their house with the deep fried smell but everyone love the end product of the deep fry...great alternative and you get the best of both worlds...love me some wings!!!

Mix about a cup of Sweet Baby Rays to a tablespoon of Sriracha and toss..youre welcome!! BTW, how deep is your oil in the pans? I usually use my Frydaddy or my cast iron I fry fish in..

Don’t knock till you try it… trust me - After you cut into sections boil the wings for a couple of minutes. Yes, in a large pot cover with water and bring to a boil. After they get to a full boil turn off the heat. Remove the scum from the top of the water. - drain and dry them very well. Paper towels on one layer. After they are dry - fry them as you are now. Crispier wings guaranteed and cook quick in the oil - plus oil lasts longer without all the extra chicken renderings that have gone with the water. FInally, you can grill them without frying and they will get crispy on the flat top. Try it…

Oh man do I love chicken wings... deep fried even better. It was nice to see you do the deep fry on the griddle, I still have yet to try it. I have a deep fryer, but never really use it because everything in the kitchen ends up coated with oil and smelly. Doing it outside is definitely a bonus. I always hear that doing it in those thin shallow pans is dangerous, but I think you guys and myself have been around the block enough to know how to handle it. Anyway, nice video, have a great week. when you need a shitload of wings at one time I like to put them on a gas grill with a basket of mesquite making some smoke and give them a ride until the skin renders out and becomes crispy. Season them first as you like. Once done I toss a dozen or so into a gallon size zipbag and pour in my wing sauce of choice and shake. You can get many dozen done at once that way.

I love you both, brothers, you know that. But I can't overstate enough that this is not for a beginner cook. Frying in vessels like that is extremely dangerous. Please make sure that oil is back to room temp before you even think about handling it. The disposable tins warp and twist very easily, never move them during a cook. I just want everyone safe. You guys know my background, and I've seen some brutal incidents.
Now, 1. Save those wing tips for stock/broth. 2. The wings look fantastic! I could smell them cooking up here in NY! 3. As I love all things hot sauce, I'll have to give Aunt Carol's a try! From your description, I'm thinking a spicy Peter Luger's style steak sauce. 4. All of the Dalstrong blades look amazing. 5. ❤🙏
