I toast my bun on the grill with butter or garlic butter. I like to toss in a clove of finely minced fresh garlic with the onions and some red bell pepper slices. Maybe some banana pepper or peperoncini pepper slices for zing. Also a light dusting of garlic and onion powder on the beef, cracked pepper from a pepper mill, a couple splashes of quality Worcestershire sauce, then some seasoned salt once the meat is fully cooked and mixed with the onions, then toss on the cheese to melt. Yum!
Do this, but put cream cheese on the bun instead of cheese wiz. Also, i like to season and add my unions/peppers after cooking the steak so it doesn't dry the meat. That looks delicious, and no, this isn't criticism, just more of how i like to make mine.
Where can you get that thinly sliced steak? That’s the key to the sandwich! Best Philly Cheesesteak video I’ve seen!….and it’s because you recognize the importance of texture….which you get from quality paper thin sliced steak. Other people that use cuts of steak that are too thick and don’t seem to understand that it’s not good when you bite into the sandwich and the meat pulls out in thick lumps instead of letting your teeth cut through. It really makes all the difference!
I cut some beautiful chip steak on the deli slicer at work - I used bottom round just cuz I had about 3lbs left and it had a good marble on it. Sliced it real thin, layered it real nice. Come in the next morning and manager pulled it cuz it "had fat in it and cheese steak meat should be lean" yea says who? She then proceeded to chip off tiny chunks of top round and throw it in a boat and called that chopped steak. I bit my tongue but I wanted to call her out on her BS so bad. Traditional ribeye is used for cheese steaks and that cut is more fatty than bottom round. I'm just sick of lazy overweight people forcing me to do things the wrong way!
