But from my understanding of jerky type curing in open air (Filipino food), try to monitor it more, i.e. lay it on the drying rack, coat both sides, then in 4 hours flip and coat again. Do so until starting to "leather up". Then you can put in Tupperware with more salt or procure and it should store well if sealed air tight. Good luck, maybe you've done this by now already. When I lived in Thailand, local vendors used to sell marinated grilled chicken livers, gizzards, and hearts on skewers... delicious if you like that sort of thing, and only about 25 cents per skewer too.
eat chicken livers all the time, pan fried same as you do the chicken. so what ever spices you put on pan fried chicken use the same for liver and pan fry it. bonus its great for you, very high in iron. great for anemics

Are you kidding me? Chicken liver is yummy and load with good nutrients; my favorite way to prepare it is stir fry with cubed pineapples and tomatoes, of course with lot of onions and garlic. You want to get fresh chicken liver from Asian supermarket; once you try it I bet you won't get chicken liver for the fish, you gonna get some for yourself as well; thank you for the video and good luck with the liver😆
I think the main thrust of this post has gone up in a fragrant bouquet of deep fried chicken livers, mashed potatoes, green bean casserole, yeast rising rolls and Sweet Southern Iced Tea!
Man try the catfish magic ….good thing I bought a braided line 65 pound I catch catfish with it and regular chicken liver I leave it to cure in the sun in a rack and flip it every hour for 2 to 4 hours I live in Texas it’s dry like jerky and stays on a treble hook better

Wrap the livers in a piece of bacon and pin with a toothpick then cook on the grill...yum!
Soak livers in buttermilk , roll in flour , fry in oil , mashed or fried potatoes . Mmmmm mmm good
I think those critters were crawling out of the meat as it cured. Possible?
P.S. I use Pro Cure for chicken meat and add Anise oil for more scent.
