How to make an EPIC Chocolate Fudge Cake (Bruce Bogtrotter-style) 100% naturally plant-based

  • A NEW WAY TO BAKE : TRIPLE CHOCOLATE FUDGE
    A classic chocolate cake that would make Miss Trunchbull and Bruce Bogtrotter from Matilda both squeal with delight. A rich and pure chocolate ganache encases a fluffy, moist, richly flavoured chocolate cake.

    Fudge Cake Batter

    - vanilla extract
    - apple cider vinegar
    - extra virgin olive oil
    - muscovado sugar
    - cocoa powder (unsweetened chocolate)
    - plain (all-purpose) flour

    Hi Phil, your book is the work of a true pro' thanks!
    I run a small Bakery near Bristol and would love to try this cake mix in straight sided muffin sized silicone moulds. Do you think it is sufficiently 'sturdy' to hold together in a small format? Many thanks, Karen

      Great to hear! I think it could certainly work by you may need to try a small batch first. Will definitely work if you are using paper liners

    I am a bit naughty here, but just wondering if I wish to put dairy milk instead of plant based milk to my ganache, is that possible? Keeping the same ratio am I right?

    This looks amazing! Just one thing, how do you remove the finished cake from the turntable without damaging it? I'm a baking newbie 😂

      Take a clean, long palette knife and slip it underneath the cake bottom. (There should always be a round cardboard for the cake to sit on so that it’s separate from the turntable. In this case, he used the bottom of the springform pan.) Using your palette knife, lift the edge of the cake high enough to slip your fingers underneath the cake and by that point, you can lift the cake up with your hands.

      Use a cake board on the turntable; it'll be easier and a better finish. Don't keep the bottom of the cake tin on the cake! Also, have bigger bowls!!! Don't use silly little bowls like he did.

    Hi, hoping to try this recipe as my wife is diary free. What is your suggestion for the dairy free milk for the ganache?

    I was hoping to see something new here, but this seems to me like the usual vegan chocolate cake i have baked different recpies of, several times. Each time it comes out too dense, crumbly and falling apart

      It’s had some amazing feedback (including Ottolonghi who called it his favourite bake in the book) It is rich but doesn’t fall apart and the ganache is a wonderful consistency that doesn’t split when spread or worked/piped. Hope you’ll try it and let me know!
