Cut that hot pepper up. Leave the herbs for last. Don’t overcook the protein.
I love the way that garlic was cut. Maybe add fresh ginger? I don’t hate this, but I feel a few things were out of order.

I think you are correct from a standard culinary view as well as my personal tastes. I'd sauté
the onions and chili in the kidney fat first, then add the kidney to cook for a few minutes. After
that everything needs to be added quickly saving the herbs for last. If the kidneys are rubbery
in the least they are overdone.
I missed the presoak and rinse in salted vinegar water. It's asking too much for me to play macho
man and power through the urine taste and smell.
