How long should I keep the dough ? Is there a particular time period ? Like if we are making Kerala style bread we have to make the batter and put some yeast and keep overnight. Like wise do we have to keep it overnight or just few hours would b enough ??

Yes you can, for up to 1 month. when you want to cook it just use low flame and take it out of freezer 5-6 minutes before cooking it.
