Kadhi
Kadhi is inseparable from Gujarati cuisine. It is basically a wonderful sweet and spicy curd mixture thickened with gram flour, which can be enhanced in many ways using other ingredients like pakoras and koftas. This simple dish requires tact and perfection, which comes from practice. Remember never to boil the kadhi on a high flame as it tends to curdle.
Preparation Time: 5 minutes. Cooking Time: 15 to 17 minutes. Serves 4.
2 cups fresh curds (dahi)
5 tbsp besan (Bengal gram flour)
2 tsp ghee
½ tsp cumin seeds (jeera)
½ tsp mustard seeds (rai / sarson)
2 pinches of asafoetida (hing)
5 curry leaves (kadi patta)
Salt to taste
1 tsp ginger-green chilli paste
2 tbsp sugar
For the garnish
2 tbsp finely chopped coriander (dhania)
For serving
Rotli
Puran poli
Khichdi
1. Combine the curds and besan in a deep bowl and whisk well till no lumps remain.
2. Add 3 cups of water and mix well and keep aside.
3. Heat the ghee in a kadhai and add the cumin seeds and mustard seeds.
4. When the seeds crackle, add the asafoetida and sauté for a few seconds.
5. Add the prepared curds-besan-water mixture, curry leaves, salt, ginger-green chilli paste and sugar, mix well and bring to a boil for 2 minutes, while stirring continuously.
6. Reduce the flame and simmer for 10 to 12 minutes, while stirring occasionally.
Garnish with coriander and serve hot with rotli, puran poli and Khichdi. - Хобби

I live in 🇨🇦 Canada 🇨🇦 by myself, and I didn't know how to make Gujarati Kadhi, and it's late night in India. So, I thought instead of disturbing Mummy, I can search 🔍 on RUclips, and I found this beautiful video. Amazing recipe mine came out awesome first time kadhi is smooth in texture and not watery and besan is not separate than curd and water. I used hand mixture to mix curd and besan really really well about 5 minutes or so and while it was cooking I kept stirring kadhi and it came out awesome. Thanks

Tarla maam is no more. She was the first chef on TV. It was her cooking program which use to come on zee tv. An inspiring guru for many. Even after so many years I always look back at her version for certain recipes. May her soul rest in peace

Tarla, thanks so much for the clear easy to follow recipe. I made this for the first time last night, and added cubes of paneer, and sliced boiled small potatoes (aloo). I am wondering what kinds of veg/meat Gujarati's typically serve in this gravy? I've seen Bhindi, and I am thinking Gobi and Sweet Corn would be great. Also for meat eaters, it seems it would be delicious with fish/chicken. Any thoughts? Namaste!

you are right, gobi will taste nice. Also, you can make pakodis and add to the kadhi. Most Gujarati are pure vegetarian so, they do not eat meat.
