I'm wondering what temperature he uses to cook the over easy egg because I'm trying so hard to cook an over easy egg like he does and flip it in the air. So far I just screw up and create a mess.
mid-low to medium. you want it to cook slower than the scrambled because you want the white to be able to cook through evenly without the bottoms browning.
You are so right. I suppose it's because the proper pronunciation (Al-ton) isn't obvious and if you don't take the time to learn it you'd probably default back to "All-ton" too.

The egg flip is less dramatic than it looks. Only takes a small flick and you're having breakfast. ;)
