- Easy to make SMASHED ROASTED POTATOES!! Excellence side dish for the holidays or for any day of the year!! Recipe below...
SMASHED ROASTED POTATOES
Preheat oven to 350 degrees F.
12 bite-size Yukon Gold Potatoes, rinsed under cool running tap water
1-2 tablespoons olive oil
1/4 teaspoon freshly cracked pepper, optional
1 teaspoon kosher salt, optional
1. Add potatoes to a 3-quart sauce pan. Add water to cover top of potatoes by 1-inch. Add 1-2 teaspoons of kosher salt to boiling water, optional. Cook over medium-high for 15 minutes or until fork tender.
2. Remove potatoes from boiling water to bowl. Add olive oil, salt, and pepper. Toss until potatoes are well coated.
3. Add potatoes to baking sheet. Smashed potatoes using the bottom of a cup or ramekin dish.
4. Bake in preheated oven for 30-40 minutes or until golden in color.
5. Serve as a side dish or just for a snack!!
