Ingredients:
2Kg Roasting Potatoes
120g Goose Fat
1/3 Cup Vegetable Oil for stove method
2 Chicken Stock Cubes
Rosemary
Thyme
4-5 Cloves Garlic
Seasoning Mix:
2 Chicken Stock Cubes
OR
1 tbsp Chicken Seasoning
2 tsp Garlic Granules
2 tsp Onion Powder
2 tsp Black Pepper
1 tsp Smoked Paprika
Salt to taste

This is good, can I make a paste of the garlic? For the oven version can I use vegetable oil?

Do you use already boiling water to par-boil the potatoes? Or cold water?

Added cold water then boiled...

I cut the potatoes up and them boil them
Then stick a knife into them when they are boiling and if it goes right through easy
Take them out of the pot
Put them into a deep fat fryer
And then cook them in the oil until they are a nice colour
Then take them out
Drain them on some paper towels

Is there a reason you peeled the skin because with these potatoes, you can leave the skin.
