when adding the pasta to the sauce pan is meant to cook in the sauce so it sticks better & the sauce becomes infused into the pasta, so always best to have the pasta not completely finished cooking when it comes out the of the water. Also before you add your canned tomatoes, I add tomato paste to cook to add a roasted tomato flavor ...almost burning it.

You nailed it! I make this at least once a month. I fire roast onion, a poblano, and a few sugar rush red peppers. The fire roasting is a game changer for me. 🔥😎🔥 Keep the videos coming!

I never have white wine in the house so I always use a half cup of Jameson Whiskey instead, works great to deglaze pans, watch out for flare up. And this is also very good over rice. Can add pineapple chunks, & make pork fried rice to go with this, chaning it into an Hawaiian dish.

Trying this with home grown calabrian chilis and using the shells during reduction. Will report.

Onions and garlic in the soffritto goes to more Spanish and Mexican cuisine ... but your recipe looks amazing 😍👍🌶

Yeah, I like quite a bit of heat, but definitely adjust to taste.
