Yes, the profile makes an extremely big difference. But you didn't show that in the video, because you used one key in isolation. You need a full keyboard. The difference is simple: Low profile = Bright and ticky/clacky, High profile = Deep and thocky. And the difference is massive. It's due to how the sound waves are trapped inside bigger keys. This video doesn't show it properly unfortunately.
Cherry profile keycaps have interference problems with some north-facing LED switches. There's not enough clearance under the keycaps and so they hit the switch's housing, worsening both the sound and feel. The issue is most prevalent in the Q-row caps. You actually hear it in the video as well.
So true! I have NK Silks which are already pretty clacky, I switched from OEM profile to Cherry, and I must admit I prefer the sound of the slightly larger OEM profile.

the biggest difference though is the thickness, so pbt keycaps produce a more switch focused sound and abs for example a more keycap heavier sound. I would go for pbts (no matter which profile) because they can produce that satisfying *t h o c c*
How to know if I would like to type on xda profile? The OEM profile has too long of travel distance and small surface area for me. Probably because I'm used to my membrane Logitech keyboard. Would like to have the mech version of that keyboard.

mt3 makes a lot of thoccs which most people like but I personally like cherry more becuz it's more clacky which is my type
