    Oysters are best when raw. The taste of the sea is the most important part. When you taste oysters from the far northeast, you can taste the cold brine of the north sea. And when you taste southern oysters you can taste the sweet finish of the sunny shallows. I would recommend trying them fresh before investing in a piece of metal

    Cool... Up here in the northeast... buy them fresh, pop the flat off, place in cast iron skillet with a bed of rock salt to stabilize them (Keep that great liquid in), add what ever you want (Rockefeller, mignonette, lemon & garlic, etc...) The one bad part... half do not make it to the grill! LOL

    We used to do our oysters this way from time to time when I lived in Alabama! Man! We used to get huge fresh water oysters and party hard dude! These looks great!

    Good cook Joe, and I could almost taste those fine oysters brother! When Tommy brought the Oyster Beds to me, I tried that large one on my Weber, and it didn't quite fit. It was a little long, and I explained that the Weber Kettle is probably the most sold grill of all, and he mentioned that they may have to resize, and after watching this video, I can see that they did indeed resize them. Fits great now. Unfortunately I have the original large one that won't fit, but I do have the 2 smaller ones that do good on the Weber. You got me thinking oysters ;)

    This friend and I got the idea to have an oyster roast one day for a local group of Harley bikers we rode with. Myself I knew nothing about cooking oysters but my friend from Mississippi had a good idea. We live on the coast of South Georgia so we go to a fresh seafood market and got plenty fresh still in the shell oysters and back home we go and got a good pit fire going. My friend came up with a sheet of tin, looked like roofing, laid it on the fire, got a couple burlap,sacks soaked in water and laid it on the tin. On top of this went the fresh oysters and in no time they were ready and a bunch of hungry bikers pigged out. And that's how we do it, in South Georgia.

      yes I have done them that way myself as well on a hot piece of tin over a fire sometimes covered with a wet burlap sack

    I used this recipe tonight and the oysters turned out excellent. I did add some extra cheese as they cooked. I am going add some more hot sauce next time than I did tonight. again, excellent!

    Awesome. Just made the same thing but in a cast iron corn bread pan with the segments so all the oysters had their own
    section just like on here. Love it man.

    Hahaha! That's a *big* tablespoon and a half of garlic. You measure garlic like I do.
    That oyster bed is pure genius! It looks great, and the whole concept is just brilliant. Very impressive!

    Got the Oyster cooker, but can't seem to get the Oysters onto the cooker faster than the guys eating it raw. So made meat balls shaped like foot balls in them. Worked good!

    I've never had Oysters, but if I was going to try them they would have to be cooked, or deep fried, lol. These look pretty good and the Oyster bed pan is an awesome idea. I saw Rus use his and his Oysters turned out mighty fine looking, too. TFS! :)

    Taste good is taste good, we don't all live 20 minutes from the beach. My taste buds are craving something from my grille now - and my OCD was aching to reach into my computer screen and flip that one that was half way out of its pocket back in center. Lol.

      The important thing is: Using Charcoal! I gave away my propane bbq which I never really enjoyed and returned to a charcoal bbq and a cast iron smoker box. Bad news is it's the snow bank blocking my shed where I keep it.

    I've never heard of an oyster bed, usually I just let them cook on the grill, whilst they're still inside the shell, then pop them open, then finally season them etc and enjoy them just like that...Although this method of cooking them on the oyster bed looks interesting, I might try it someday.

      A couple weeks ago I decided to try a few ousters fresh from the shell. They were Ok but they didn't have much texture, as it was the first time I ate them raw I had no personal frame reference to grade them by. I am in eastern Canada, reading your comment I wonder: would these ones have a more firm texture or less "delicate" than the ones I would have gotten here?

      The only way you are going to preserve anything in our waterway's, creeks and estuaries is to push the commercial fisherman offshore, where they belong. On the east coast, where I'm from, they are raping everything and their by-catch is ruining everything for the sport fisherman.

    Just an idea I had while watching your video..... a large turkey baster would really work well in putting your liquid basting sauce on each individual oyster, and even sucking up the cooked sauce in the large reservoir for redistribution.... I wish this wasnt so expensive....

    I ate fried oysters once and didn't like them. After seeing this I want to try them again. Maybe I'll like them better cooked this way with butter and garlic. They cost 59 cents each, this week, at the store so I'll pick up a few and grill them on the half shell tomorrow. I hope I don't gag. LoL

      Ok, ate my first one and it's delicious. Cheater recipe: Pop whole oyster, in shell, on hot bbq'er until it pops open. Take off flat shell. Top with a mixture of: Alfredo Sauce, Italian Bread Crumbs, Pesto Sauce and Grated Romano Cheese. Blast 'em back on the q'er until bubbling and browned. WOW! Sure makes it easy when you aren't feeling well. 23 oysters left to go... slurp. 12 dollars for the bag of 24 large oysters. Pretty good eaten'. :)

      Temperance Rossi That method works too but you can't let the flames 'kiss' the edges of the meat if you throw them on closed. You probably also fully-opened the oysters after pulling them off of the grill and hence had to add the toppings to the oyster post-grilling, right? I am curious because I have had this mental discussion about how to grill oysters a dozen times.
      I still prefer them raw but if I grill them I open them and leave them in the deeper of the two shell halves for grilling.

      Bob Loblaw There isn't any flames, wait until the coals die down but are still piping hot. It only takes barely a minute before you hear the 'pop' and then the oyster starts to open...it happens fast so when you hear the 'pop', pull it off (I saw Japanese guys at the beach open their oysters this way) the oyster keeps opening it's shell once the pop happens - even if it's taken off the grill. Yes, add the toppings after the first opening of the shell, the oyster is pretty much still raw inside, only the juice and shell are hot so the outer-most portion of the oyster is barely cooked. I grill them flat shell up before and after opening, keep the deep end down to save the juice. Once the oyster pops and opens, scrape the meat off the flat top and throw that flat shell away, keeping the rounded shell down to save the juice and meat. Then loosen the meat from the bottom rounded/deeper shell. Then put your toppings on and grill again until they are done to your liking. It's the first time doing this and they came out delicious. I don't know if it would work if you like fully raw oysters, I don't think I could eat a raw one.
      ETA: Yes, throw the whole oyster on at the beginning, fully closed shell, deep shell always on bottom. The heat is what opens the shell. I didn't have a shucking knife at the time so thought of this.

    I'm staying here in New Orleans right now. I was thinking about trying out Acmes restaurant or dragos. because those grilled oysters are delicious. I'm from California and normally oysters are eaten raw with lemon juice and hot sauce. but I wonder whenever I go back home if the so cal coast oysters will taste different?

    I do think they were cooked too hot and too long. As you said, pre-heating the plate was not necessary.
    I'd love to see a video where freshly shucked oysters, on the half shell, are placed in the plate and then cooked on the grill. First, starting with fresh, live oysters is best. And you would retain a lot of their liquor in the shell. Next, they would still take on the flavored butter taste (yum) and a smoky aspect from the grill. They plate would make a convenient way to place and remove a bunch of oysters all at once rather than fussing with them one at a time.

    Why would you cook an oyster? I live near the Schelde river, (Belgium/Netherlands) we open the oyster, and eat it, thats all we do to it. Oysters from a plastic container? And pregrated Parmigiano? Right here in my place you would be shot for that!

    I like your thought about reusing the Sauce by putting it in the next batches. Holy Cow how much better would that be?

    Those look great. I was wondering if the oysters down south are that much different from New England oysters because I am from Long Island NY and have bought oysters and tried to bake them but they come out looking like boogers! They were not dried up or anything like that so I don't believe I overcooked them. We usually eat them raw but I saw that your shucked oysters have a much more meaty consistency to them. Ours look like loose snot but we eat them none the less so are some oysters better for cooking than others? Thanks, John.

    Thanks for sharing, but you grossly overcooked them. That is when they plump up, they are done. For you that was when you first dropped them into the tray. That said, they were done in the first 30 secs. or less, but you continued way beyond that.
