  • This is an Italian "classic trio" - Pea's, with mushrooms and onion. It's a delicious combo and makes for a great side dish. This recipe is very easy to make and comes together quickly - enjoy!!
Peas with mushrooms & onion (the classic Italian trio)
    Ingredients
    • Peas: 1 - 15 oz can OR 2 - 8 ½ oz cans OR 14 oz (400 gm) of frozen or fresh peas (see note below if using fresh peas)
    • Mushrooms - 227 gm (8 oz) (typically, 1 small package), sliced thick
    • 1 medium onion (sweet onion is preferred, but not essential) sliced thin, then diced
    • 4 TBSP Extra Virgin Olive Oil (EVOO) plus an optional drizzle
    • 2 TBSP butter (salted preferred, but unsalted is fine also)
    • Salt and Black Pepper to taste
    Process
    • Add the 4 TBSP of EVOO to a large frying pan, along with the onion, and sauté on medium heat for 5 minutes, stirring occasionally.
    • Add the butter and the mushrooms, mix to coat, and continue to cook for 5 - 10 more minutes on medium heat.
    • Add the peas, mix well to coat, and cook 2 - 3 minutes (4 - 5 minutes if using frozen peas)
    • Add salt and black pepper to tastes, along with the optional drizzle of EVOO - mix well and serve hot - enjoy 😊
NOTE: If using fresh peas, then they will need to be prepared first, which is very easy to do. Just put them in a small pot with water, bring to a boil and cook for 5 minutes. Drain and that’s it, they are now ready to be used in this recipe
If using canned peas or frozen peas, there is no need to do this - you can add them straight in and follow the recipe 😊
