    Ingredients:
    - Pork Tenderloin: 1 pound (450g), trimmed and cut into medallions about 1 inch thick
    - Boskoop Apples (or substitute): 2 large apples, peeled, cored, and sliced
    - Butter: 2 tablespoons
    - Onions: 1 large onion, thinly sliced
    - Dry Cider: 1/2 cup (120 ml) I used 330 ml
    - Heavy Cream: 1/2 cup (120 ml)
    - Salt: To taste
    - Black Pepper: To taste
    - Fresh Thyme: 1 teaspoon, chopped (optional)
    - Olive Oil: 1 tablespoon

    Lovely French inspired dish Rik. Growing up in the 1970's as a child, and before the majority of people were cooking non native dishes, we had a French inspired dish of "Meatballs in Piquant sauce" and thought we were very exotic lol!

    Pork and apple anything are lovers. The Germans tease us for having silent letters, but we got those from the Normans, they can have a word with 15 letters in it pronounced "Le"...it didn't adapt well to the alphabet we all use :) They do cook well, and make good wine. Anyway...lol...this is a great dish, I'll be making this one, thanks Rik.

    Thank you for a wonderful recipe as we head into fall season here in the Okanagan valley of British Columbia Canada. Makes me savour these flavours even as I'm having my morning coffee. Good to learn confidence of adding the cream to the cooking sauce. For me a sauce that flows will be my preference to soak into my egg noodles or mashed potatoes.

    Not enough use of this great cut of meat pork tenderloin a nice classic quick-to-cook with a tasty sauce. I often make a tenderloin Wellington. Small individual serving ones.

      Cider is made from apples. By definition. Perry is made from pears. The modern marketing hype of pear or other fruit 'ciders' is just bullshit.
      And cider is fermented. What Americans would call hard cider.

      Are you in the US? He used what we call hard cider. You can also use sweet cider (plain apple cider) but it will not have the tartness. A shot of apple cider vinegar helps with that if you want the tang.

    That looks wonderful. My mom made a similar dish except she used pork shoulder steaks and no cream. Granny Smith apples were a must. She usually used soft cider. Thank you for posting. In the northern hemisphere we're headed into prime apple season so excellent timing.

    What a great dish for fall! I've made something similar, sans cream, and I'm nowhere near Normandy. I like your version better! Got boneless pork chops (pre-sliced loin) and cider in the house now, onions always, but no apples. It'll have to wait, but I'll definitely make this!❤

      It's lovely but it's lean. Don't overcook it. You have more latitude with tenderloin than loin so it's a bit more forgiving.

    It’s a long time since I made this dish,I had forgotten about it,though I make something similar with onion,apple,cabbage,white wine,and cream over loin pork chops.You know it’s strange that peas are not used nearly as much as in the UK.Its seems almost all the English based cooking shows show peas as the vegetable,but when you watch the American based shows I t’s broccoli,cauliflower,Brussel sprouts,zucchini,but no peas.I am guilty of not using them to,I keep thinking to buy a frozen bag,but forget every time and end up with everything everyone else buys,plus cabbage,and eggplant.😊

    That looks so delicious!! I have made a pork roast using what we call apple cider, which is unfiltered and unpasteurized apple juice. The alcohol type we call hard cider. I am definitely going to try your alcohol cider version!

    I cooked this today. As always, my first attempt is not quite as good as the work of the master but it was very good, nevertheless.
    I am always a bit nervous of undercooking the pork so I tend to slightly overcook it.
    I put half a clove of garlic in but will use a whole one next time.
    Thanks for a great recipe and an excellent demonstration of how to cook it.

    This one I got to have ago at cider and pork tenderloin my favourite .. trouble is just been put on no fibre low fibre diet for life ..but will pick onions out then zap sauce and apples .use as a pouring sauce it's getting I checking u tube hourly looking for riks latest recipes if not doing that going though the previous ones for ideas

    Wow! I love your recipes! I’m wondering if regular apple cider would be good? I think here in the USA we might call the dry cider you used as hard cider. Are you familiar with that name as being similar?

      @@BackyardChef I wouldn’t use apple juice, which is non alcoholic here. I’d use our version of apple cider, which is pressed apples , not filtered, or hard cider which has alcohol in it. Thanks.

    The interesting thing about French cookery, is the "country" style dishes have minimal ingredients. Makes it a bit more attainable to invest in quality ingredients. I think I will make this with boneless, skinless chicken thighs. Because they are on sale.

    You must be married the way you’re cutting up that apple we always cut it in one long strip then you would throw it on the floor to see what alphabet letter it showed, and that would be the name of the man you married
