I always recommend to kinda saute the garlic and chillie in a pan and add the sizzling oil to the noodles..... also add a pinch of salt and sugar to balance the soy sauce. My preference is adding oyster sauce instead of schewan sauce. Top it with some smally cut sausages and it would be divine
If szechuan sauce isn’t easily available then use mala powder or chinese five spices powder or both combined.They do give off a bit of chinese fragrance and thats a great alternative.If you aren’t accustomed to strong flavoured spices then add a bit of tomato sauce and oyster sauce then its perfect for you

It's a spicy paste made with sichuan peppers and red chili so I supposed you can just substitute it for some other chili paste

I don't think with that hot oil the garlic paste has cooked.
it has a possibility of being cooked but either way its safe to consume and doesnt overpower the noodles at all and help enhance the flavor
