  • Guar gum is an amazing natural thickening agent for soups, stews and gravies, and with no aftertaste. A little goes a long way as I demonstrate here.
    This product can be found in health food stores or the organic section of the supermarket.

    from Wikipedia:
    "Guar gum, also called guaran, is a galactomannan. It is primarily the ground endosperm of guar beans. The guar seeds are dehusked, milled and screened to obtain the guar gum.[1] It is typically produced as a free-flowing, off-white powder."

    Guar Gum is great to use as an emulsifier when making edible gummies. It does not alter the taste in any the way! I previously used liquid Sunflower Lecithin but it always gives my gummies a weird unpleasant aftertaste. TIP: When using Guar Gum powder... and to prevent lumps from forming, use a fine wire mesh strainer to add it to you candy. gently tapping the strainer to add the powder while stirring constantly.

    I use it in my homemade ice cream because I saw it on the ben and jerrys label and the results are fantastic! Use just a little, like 1/8 teaspoon per batch.

    I have just started using guar gum to make slightly thick, milk-based shake-like drinks. If you use a sweetener, such as stevia, you can make satisfying, low-calorie shakes.

    @ Deepak Garg dunno why the reply button isn't working. anyway, i didn't measure but used about 10ml guar in 250ml water for the demonstration. dunno if it was modified and dunno where you're going with the "solid fuel" thing.

    Regular Guar Gum has to be mixed in a blender with purified water... Since the Guar Gum you have definitely has to be of the modified (or slightly heated + dextrinized)...

    so you dont even have to cook it at all? nice!! also looks much easier to mix than cornstarch. I also notice cornstarch doesnt hold its thickening when refrigerated (like leftovers) and especially when frozen. how does the guar gum stand up under that test?

  • @KissHope
    @KissHope 11 лет назад +1

    I am wondering it a little of this added to cinnamon/sugar that you sprinkle on rolled out dough for cinnamon buns would prevent leakage. The sugar melts during the backing process and leaks out of the rolls.

    if you wanted to thicken something to the consistancy of pancake batter (like a pourable pudding), do you know how much you'd use? was it grainy at all? i'm hoping no.

    • @danrt50
      @danrt50  10 лет назад

      it's not grainy, but you do have to rub any lumps out of it against the side of the container (stirring isn't helpful, you just chase them around) it doesn't take a lot, but you have to experiment to get it right. you're better to mix some up in water first and add that instead of adding powder directly.

    The properties of the guar gum that you had used is exactly what I'm looking for, however I've not found a guar gum that exhibits the thickening and solidifying power of that which you used. Is it a modified version of guar gum? Do you recall what brand was used or the product name?

    i m in guar gum field since 7 years and belong to Haryana, india (Native place of guar) how much water and guar did you take? and i think its a modified guar bcz normal guar gum powder haven't that type of property. he dont make solid gel. he simply mix in water and make gel not a solid fuel..

    Should have left the timer running during your checks and mixes. The final result is actually morel like 6 minutes, not 5.

    • @BobG127
      @BobG127 7 лет назад +4

      Granted, it was more than 5 minutes, but it really doesn't matter, since the water and guar gum measurements were so imprecise: "about" a cup of water and "about" a teaspoon (tableware, not measuring, and very rounded, at that). Precise measurements might have resulted in more or less thickening in the given amount of time. This wasn't a scientific experiment. The takeaways here are that (1) a little guar gum goes a long way -- much farther than flour or corn starch as a thickener and (2) it thickens more with time without necessity of applying heat. (Both corn starch and flour need heat to do substantial thickening.)
